    Curry Roasted Cauliflower

    Curry Roasted Cauliflower is a curry lover's dream! Fresh cauliflower packed with delicious curry flavor, roasted to perfection. I bet you can't eat just one serving of this healthy side dish!

    You know what I find fascinating? Hearing about different people's nighttime rituals. Like what happens in their home between the hours of 8-11 pm. I'm not sure why I find it so fascinating....except for the fact that after talking to a number of different family members and friends, I realize just how different everyone's night looks. I guess I always assumed everyone else was just like me! Ha!

    So here's how my night goes: the kids are all in bed by 8:30, at which point I could totally crash if I let myself. But, of course, I don't. Because nighttime is my work time! So I head downstairs, do some quick clean up, grab a sparkling water....or a glass of wine....and then a snack. Always a snack....before settling in on the couch with my computer. Because...it's part of my ritual. Quite possibly my favorite part. Behind the wine, if the wine is happening. Of course.

    Healthy Late Night Snacking Options

    I'm not sure what it is about nighttime snacking that's so intriguing. But there's just something about snuggling up on the couch with the perfect little snack that feels pretty much perfect. Am I the only one? Maybe it's because I know that my entire night will be spent working, so the snack really is the highlight. Regardless, I always know I need to choose wisely. (The last thing I want is for the highlight of my night to feel like a huge disappointment!)

    So here's where things get interesting. I've recently discovered that one of my favorite nighttime snacks is roasted veggies. I know, I know. You can feel free to throw things at me now. But seriously. Roasted veggies are the BEST late night snack! I love Parmesan Roasted Green Beans and Garlic Roasted Asparagus and Maple Bacon Roasted Butternut Squash....and I especially love this Curry Roasted Cauliflower.

    Cauliflower is probably my FAVORITE vegetable to roast, and the curry twist makes this Curry Roasted Cauliflower out of this world delicious! My new favorite snack for nighttime or anytime! And I have the feeling it will become your favorite, too.

    How to Make Curry Roasted Cauliflower:

    Curry Roasted Cauliflower

    This Curry Roasted Cauliflower is a curry lover's dream! Fresh cauliflower packed with delicious curry flavor and roasted to perfection. I bet you can't eat just one!
    Prep Time 10 minutes
    Cook Time 20 minutes
    Total Time 30 minutes
    Servings 4 -6
    Calories 237 kcal

    Ingredients

    • 1 head cauliflower cut into florets
    • ½ yellow onion sliced
    • 6 Tbsp. olive oil
    • 1 Tbsp. curry powder
    • 6 garlic cloves minced
    • 1 ½ tsp. sugar
    • ¾ tsp. ground ginger
    • ¾ tsp. kosher salt
    • ⅛ tsp. pepper
    • cilantro for garnish

    Instructions

    1. Preheat oven to 400°.
    2. Combine all ingredients except cilantro. Toss until cauliflower is evenly coated.
    3. Spread cauliflower evenly on rimmed baking sheet.
    4. Roast at 400° for 20 minutes or until cauliflower reaches desired tenderness.

      That's pretty clever, making roasted veggies your nighttime snack! I should do that too - we loooove roasted vegetables, but we always choose a small dessert.... My evenings look like this: after cooking I drop on the couch and watch a show with the bf, then we go on and do our separate things. I like to do some handlettering or writing, and then watch my favourite shows... At the end of the night we enjoy something like yoghurt or custard and watch a show together. Pretty boring, eh?!

      I should definitely make roasted veggies my night time snack instead of chocolate because they looks so delicious! At least I have the wine part covered already 😉

      If you're going to snack at night, roasted veggies are the way to go! This looks great! I'm not sure there would be an leftovers from dinner!

      Man, I wish I could go to bed early. My kids are teens and I have to stay up until they go to bed to make sure we have all electronics in our room. Otherwise I doubt they would get sleep 🙁

      This is my DREAM recipe! Everything about it! I would fight you for the pan especially after 8pm when roasted veggies taste so especially good, yes for me too.
