Caprese Peach Salad combines the classic caprese flavors with fresh peaches and homemade balsamic vinaigrette! The perfect end of summer salad!
Have I ever told you about that one time when I almost wrote a cookbook? It was right around this time last summer, and we were actually on the same vacation we’re getting ready for right now, and I opened my email….and there it was. An email from a publishing company, wanting to discuss the possibility of a Lemon Tree Dwelling cookbook. Needless to say, I was beyond excited!
Of course, I had never actually considered writing a cookbook before. And, truth be told, I had never had any real interest in it. But when the opportunity presents itself, well….all of that changes. And suddenly, the thought of saying no barely even crosses your mind. I spent the next few weeks brainstorming and recipe writing and talking myself into all the work I knew it was going to be. And then, it fell through. Because as much as I couldn’t imagine saying no, I really couldn’t imagine saying yes to something that wasn’t exactly what I wanted it to be.
I’m not gonna lie – I was devastated. And I found myself questioning everything. But when I look back over the past year of my life, I honestly can’t imagine what life would have felt like with a cookbook deadline attached to it. It would have been brutal! Not to mention the fact that cookbook plans these days would look a whole lot different than they did a year ago.
The reality is I’m not sure I’ll ever write a cookbook. But I do have some ideas floating around in the back of my mind….just in case. And you better believe one of those ideas is a cookbook full of salads. I know, I know….people prefer sweets any day. But my love of salads is real! And this Caprese Peach Salad is right up there with the best of them. Loaded with fresh peaches, fresh mozzarella, garden basil, and homemade balsamic vinaigrette, this salad is all that and a bag of chips. The perfect way to hold on to summer weather a little longer, because nothing screams summer like fresh peaches and garden basil….am I right?
So for now, no cookbook. But maybe (hopefully) this Caprese Peach Salad can be good enough. And maybe (just maybe) it can leave you wanting more! Because who knows just what the future might hold.
Caprese Peach Salad
Ingredients
- 4 large fresh peaches
- 8 oz. fresh mozzarella
- 1/2 c. chopped basil
Balsamic Vinaigrette
- 1/4 c. olive oil
- 1/4 c. balsamic vinegar
- 2 tsp. minced red onion
- 1/2 tsp. dried oregano
- ½ tsp. salt
- ½ tsp. sugar
- ¼ tsp. pepper
Instructions
- Combine salad ingredients in a medium bowl.
- Combine dressing ingredients and shake vigorously.
- Pour dressing over salad as desired.

As much as I’d love to see you write your own cookbook, I’m so grateful that you blog and share your wonderful and beautiful recipes with us! I think you’re smart for not jumping in without really thinking about it and unless it’s 100% what you want to do, we will be content in the waiting!
