Bacon Avocado Taco Boats – loaded with lettuce, bacon, avocado, cheese, fresh corn salsa, and spicy sriracha mayo. A whole new way to LOVE tacos!
There are few things in life I look forward to more than a ladies’ night out. Not only for the good company and the time away from my kids, but for the delicious food that is ALWAYS part of it. (Trust me…we make sure of it!) I’ve been trying to do them more often….for the sake of my sanity….but honestly, it’s hard! Getting out of the house on weeknights is tricky, and by the time weekends come around, we all just kinda want to stay home. But. Just because something is hard doesn’t mean it’s not worth it. And I’ve come to realize that ladies’ nights are always worth it.
Especially when you have the right group of ladies to do them with! Over the years, I’ve found a small group that just works. Everyone gets along and enjoys one another’s company, and we always have a blast when we’re together. Of course, we might tend to get a little overzealous…(excited to be out much?)….but really, can you blame us?
One of our favorite places to go is a little Mexican Cantina that is known for its gourmet tacos. We’ve been there on many a night out…and between the tacos and the margaritas and the fun atmosphere…I think we would all agree that we’d spend even more time there if we could! But alas, we are moms. Who have lives and responsibilities and, in all reality, rarely get out. The good news? Our kids (and husbands) also LOVE tacos!
So I decided to recreate one of my favorite “ladies’ night” tacos at home, using Old El Paso Mini Soft Tortilla Taco Boats. And I must say they were AWESOME! The Taco Boats are soft tortillas formed into a boat shape, making them easy to hold, easy to stuff, and so much less messy! We all loved the fun shape and size of them….and the toppings? So delicious. We stuffed these little boats full of lettuce, avocado, bacon, cheese, and fresh corn salsa….then drizzled them with sriracha mayo for a little kick. Of course, you can fill them with whatever floats your {taco} boat….because believe me, we’ll be doing the same. I can see these little boats becoming a regular part of our dinner rotation. Which means we might need to find a new favorite place for ladies’ night out. And I’m totally okay with that.

Ingredients
- 1 package 12 count Old El Paso Mini Soft Tortilla Taco Boats
- 2 c. chopped Romaine lettuce
- 2 large avocados cubed
- 6 pieces bacon cooked and crumbled
- 3/4 c. fresh corn salsa
- 1/2 c. crumbled queso fresco
- sriracha mayo to taste
Instructions
- Divide toppings evenly among taco boats.
- Prepare sriracha mayo by combining 1/2 c. mayo with 1 Tbsp. sriracha sauce (or to taste).
- Drizzle tacos with mayo as desired.
- Enjoy!

I was looking at your pictures and wondering how on earth you made those boat shaped tortillas and then found out you bought them like that – I cannot wait to find those! How cool is that?!
