When it comes to cake, I am really all about the frosting!! Unless the cake is incredibly moist, flavorful, and AMAZING, I see it mostly as a vehicle for the good stuff (the frosting!) I’m definitely the person who always asks for the corner piece, or the flower, or both….and I’ve been known to do frosting clean-up around the edges of the knife and plate. I don’t want any to go to waste!

As much as I love frosting, I’m definitely picky about which kinds are “worth it” to me. (If I’m going to go nuts with it, it had better be delicious!) I like butter cream but not whipped cream, vanilla but (usually) not chocolate, homemade but not store bought. And my favorite frosting of all? Cream cheese.

There’s something about the way the cream cheese balances out the powdered sugar that makes it just perfect! It’s rich, smooth, and never too sweet….at least not for me! I’ve made cream cheese frosting plenty of times, and I thought for St. Patrick’s Day I would jazz it up a bit. So….I added a package of lime jello!

I’ve honestly never used jello for anything other than jello….so I wasn’t quite sure how it would turn out. But I’m happy to say it was delicious! Tangy, sweet, and limey…..with all the flavors of traditional cream cheese frosting…plus! It was good on its own or with a sprinkle of toasted coconut, and I can’t wait to show you how I used it! Ingredients

  • 8 ounces cream cheese softened to room temperature
  • 3 ounce package Lime Jello
  • 1 stick unsalted butter
  • 3 cups powdered sugar
  • 2 Tablespoons heavy whipping cream

Instructions

  1. Soften cream cheese and butter.
  2. Combine cream cheese, butter, Jello and whipping cream in medium mixing bowl and beat until smooth and thoroughly blended.
  3. Add powdered sugar and beat 2 minutes.
  4. Use immediately to frost cupcakes or store in the refrigerator for up to 1 week.
  5. Frosts 12 cupcakes.

  1. Oh my goodness, this is awesome!!! I’m totally with you, I don’t want to waste calories on bad frosting! I don’t like whipped either and I’m not a big fan of chocolate. And I never eat store bought! I can’t wait to try this one-out of this world!

  2. I love LIME! So, this frosting would be perfect for me! You must be reading my mind!!! I was just thinking about taking a trip to the FL keys and getting a slice of frozen key lime pie which I think sounds delicious! Of course, no trips are in our future but a girl can dream! I’ll definetely keep this recipe in mind for the next time I’m making cake! YUM! Can’t wait to see your next cupcake recipe my friend!

    1. I totally hear you!! I would LOVE a tropical vacation and there is no way that’s happening anytime in the next 5 years! 🙂 I guess we’ll have to pretend our back yards are the tropics this summer…..all it really takes is a kiddie pool for my feet and a nice, refreshing cocktail….right?? 🙂

    I don’t consume gelatin and was wondering if the jello is just for color and added flavor? I was thinking of using a little food coloring and extra lime juice, but am concerned about making the frosting too wet. Any suggestions?

  5. I’ve used this frosting recipe several times. I’ll add a few drops of lime extract. I usually use the frosting on top of a lemon cake ( with pudding added to cake mix ). Several people from our Bingo group have asked for the recipe. Thanks for making me semi-famous. It’s a great frosting !
