Pineapple Mimosas are a delicious twist on a classic! Made with just 3 ingredients, they’re the perfect cocktail for Mother’s Day, Easter, or brunch with friends!

When it comes to brunch cocktails, mimosas are always at the top of the list. They’re refreshing, they’re easy to make, and they’re one of those things that everyone seems to love.

Truth be told, I’ve never met a mimosa I didn’t feel the same way about! Whether it’s a classic mimosa, a tropical mimosa, a lemon basil mimosa… they’re all equally delicious. And this Pineapple Mimosa is no exception.

Made with just 3 ingredients – champagne, pineapple juice, and triple sec – it’s a delightfully refreshing twist on a classic and guaranteed to be on repeat around here all spring and summer long.

Because life’s too short to be boring… or to keep drinking the same old cocktails! Let’s mix it up!

Champagne – The base of any mimosa is champagne, which could be prosecco, cava, or any type of sparkling wine. I always prefer a brut variety, which is less sweet than other varieties. If you like your mimosas sweeter, feel free to use extra dry, dry, or even demi sec.

Pineapple juice – The other key ingredient in a mimosa is juice, and this recipe calls for 100% pineapple juice. I usually buy the canned version, but it’s also available in the refrigerated juice aisle.

Triple Sec – For an extra dose of flavor and fun, I decided to add a splash of Triple Sec to this recipe. Triple Sec is a type of orange liqueur, similar to Cointreau or Grand Marnier but less expensive. You can feel free to substitute any type you prefer.

Pineapple wedge – The perfect garnish for a pineapple mimosa is, of course, a fresh pineapple wedge. As an alternative, substitute a canned pineapple ring!
