It’s 4th of July weekend! And…..you guessed it……I have another cocktail to share with you! Does it seem like I’ve been sharing a lot of drink recipes lately? Well, I have. Because it’s summer! And there’s nothing I love more about summer than enjoying a refreshing drink with friends. Especially on a holiday weekend!

This drink is one of my summer favorites. Pineapple juice, tequila, a twist of citrus…..it’s like summer in a glass. Does it get any better?

I plan to enjoy a few of these on the 4th. After the parade. Before the fireworks. With some guacamole! Sounds pretty perfect, don’t you think?

Ingredients

  • 2 ounces silver tequila
  • 3 ounces pineapple juice
  • 2 ounces club soda
  • 1 1/2 Tablespoons lemon simple syrup recipe in notes
  • juice of 1/2 lime

Instructions

  1. Prepare simple syrup by bringing water and sugar to a boil in a small saucepan.
  2. Remove from heat; squeeze in lemon juice.
  3. Let stand until cool.
  4. Prepare drink by combining all ingredients in a glass.
  5. *Recipe can be multiplied to make a pitcher!

Notes

Lemon Simple Syrup:
1/2 c. water
1/2 c. sugar
juice of 1 lemon

  1. Yum! These look Night I’m not a huge drinker but on July 4 I plan to have a couple celebratory cocktails. These look like they would fit the bill!

  2. Summer is totally the time for cocktails! Love this pineapple version of a grapefruit classic. I would totally be down with one…or two of these beauties 😉
