I can’t remember the last time we didn’t have snow here. And I don’t just mean on the ground…..I mean falling from the sky. It has been snowing daily for what feels like weeks now….so much that we can no longer distinguish our driveway from the rest of our yard or remember what the world looks like in color! I know that sounds dramatic, but if you could see out my windows right now you’d understand!
I’m not much of a snow person….or a cold person, for that matter….which is unfortunate since I live in Wisconsin! But winters in Wisconsin are uncomfortable – the below zero windchills, the slippery roads, the numb fingers and toes, the need to either stay inside or be bundled in 18 layers….

And so, every year around this time (February is the worst), I start thinking about summer. And tank tops. And sun. And cookouts. And cocktails. And firepits. And s’mores….. And since s’mores are tricky in winter, I decided I needed to figure out how to make them Wisconsin winter-friendly.

Cinnamon S’more Blondies – No campfire needed

Okay….so the other part of the story is these marshmallows that have been staring me in the face every time I open my cupboard. I think I found them sometime after Christmas, and have been waiting for just the right way to use them.

Cinnamon s’mores! How fun!! Cinnamon s’more blondies….!? Even better.I don’t know about you, but I’m not so sure Punxsatawney Phil is right about an early spring. The way things are looking around here, winter will be holding on a LOT longer. More time for these bad boys, I guess… 🙂

Cinnamon S'more Blondies

Prep Time 10 minutes
Cook Time 30 minutes
Total Time 40 minutes

Ingredients

  • 2 c packed brown sugar
  • 2/3 c butter
  • 2 eggs
  • 2 tsp vanilla
  • 2 c all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1 c white chocolate chips
  • 7 cinnamon graham crackers crushed
  • 2 c Kraft Cinnamon Bun Marshmallows
  • For Cinnamon Glaze:
  • 1 c powdered sugar
  • 2 Tbsp milk
  • 2 tsp cinnamon

Instructions

  1. Grease a 9x13 inch pan; set aside.
  2. In a medium saucepan heat brown sugar and butter over medium heat until sugar dissolves, stirring constantly. Cool slightly.
  3. Stir in eggs, one at a time, and vanilla.
  4. Stir in flour, baking powder, and baking soda.
  5. Spread batter in prepared pan. Sprinkle with white chocolate, graham crackers, and marshmallows.
  6. Bake at 350 for 30 minutes or until done.
  7. Remove from oven and drizzle with cinnamon glaze.

    Don’t laugh, but I’ve never had a Blondie – EVER! The bf is always trying to get me to try his but for some reason or another I can’t bring myself to do it. Those marshmallows on the other hand may push me into finally trying a Blondie.

    The recipe looks delicious, thanks for sharing. Toooo bad its so cold there in Wisconsin, wish I could share some of our Southern California sunshine with you, it was about 83 degrees here, (we’re about 50 miles east of LA), had my windows and doors open to air the house out, but it will be cooling down in a couple days to around 68 degrees, thats when we all get out our warm clothes again. Anxious to make the blondies.

    Oh heavens those look so naughty and so good I have got to make them. Hope your snow slows down at least for awhile. We’re pretty burned out on same old stuff so a new dessert recipe will be fantastic. Dessert, how about breakfast.
    Know how you feel gal. We moved from San Diego area to MT in 92 and it was a mighty cold winter, 25-45 below during the day for weeks. I used to go with my hubs who was a trucker. We hit Wisconsin, the Dakotas, MN many times in winter so know how cold it can be. I got an education about the Northern part of our country going with him. I like the cold, getting all geared up with parka, etc. Had to do that many a time to shovel snow at our place when he was gone. I was 52 when we moved to MT. What an education and culture shock but I learned what I was made of and could do on my own. We now live west of Grand Junction, CO, not as cold as long but we had our stint with it this winter. Over Christmas and New Years our furnace decided to go on vacation at one of coldest times. Thanks a bunch but we survived with electric heaters. I can remember being on our 20 acres in country with only 5% propane left in tank and no money for more for few days. Just one of those things you survive. I’d still move back there if we could.
