Well, we finally did it. We finally bit the bullet and signed our kids up swim lessons. Like, real swim lessons, at the Y. We figured it’s  about time they learn how to swim….now that they’re almost 8 and 10 years old and have never had more than one or two park & rec classes in their lifetime….{yikes!}

I honestly don’t know what we’ve been waiting for. We just don’t spend that much time near water! In fact, I tend to avoid being anywhere near water with 4 kids….especially 4 kids who don’t know how to swim. It freaks me out! Do you see the vicious cycle?

Well, you can only avoid it for so long, and turn down so many swimming invitations, before you need to just face it. Tackle it. Bite the bullet….which is exactly what we’re {finally} doing. And…I’m happy to report that the girls are LOVING it! They’re having a blast…and hopefully learning something along the way. And, surprisingly, the younger two are totally entertained by watching their sisters….and I’m pretty sure I have Nora 90% convinced she should take a class, too. Win, win, win.

As for me? I’m just hoping to avoid actually having to get in the water, myself. Because as much as I want my girls to know how to swim, and maybe even enjoy it, it’s not really my cup of tea. Diving into a cold pool feels more like torture than fun…and swimming laps? Forget about it!

Of course, I know that swimming burns a ton of calories, which is why I’m committed to saving calories in other ways…like these Skinny Raspberry Mojitos! If you think about it, it makes total sense to make all your cocktails skinny. Especially when you’re using Truvia®….which means you don’t have to sacrifice any of the flavor! These Raspberry Mojitos have all the flavors of a traditional mojito, combined with fresh summer raspberries. It almost goes without saying that they’re completely delicious. And if it keeps you out of the pool, well, that’s just a bonus!

Serves: 1 drink
Ingredients
  • 6 fresh mint leaves, torn in half
  • 2 oz. white rum
  • 2 oz. sparkling water (I used lime)
  • 2 oz. raspberry simple syrup
  • ½ c. crushed ice
  • mint sprigs and fresh raspberries for garnish
  • For raspberry simple syrup:
  • ½ c. water
  • ¼ c. Truvia Baking Blend
  • ½ c. fresh raspberries
Instructions
  1. Prepare raspberry simple syrup by combining water and Truvia Baking Blend in a small saucepan.
  2. Bring to a boil, then remove from heat and add raspberries.
  3. Muddle raspberries until no large pieces remain.
  4. Set aside to cool.
  5. In a cocktail glass, gently muddle mint leaves.
  6. Add 2 oz. rum, 2 oz. sparkling water, and 2 oz. simple syrup.
  7. Stir, then top with crushed ice and garnish with mint sprigs and raspberries.

    This mojito is calling my name! Love that you used Truvia in the simple syrup. 🙂 We tried swimming lessons for our youngest at the local pool when she was about 2. She HATED it & actually developed a fear of getting into the deeper water with me after that. Needless to say, we didn’t attend the last 2-3 lessons. But I do want to get her back into some kind of swim lessons now that she is 4.
