Raspberry Mojito

Ingredients

  • 6 fresh mint leaves slapped
  • 2 ounces white rum
  • 2 ounces sparkling water I used lime
  • 1 ounce raspberry simple syrup see recipe below
  • fresh mint and raspberries for garnish

Instructions

  • Prepare raspberry simple syrup by combining water and sugar in a small saucepan.
  • Bring to a boil, then remove from heat and add raspberries.
  • Muddle raspberries until no large pieces remain.
  • Set aside to cool, then strain.
  • In a cocktail glass, gently muddle mint leaves.
  • Add rum, sparkling water, and raspberry simple syrup.
  • Stir, then top with ice and garnish with mint sprigs and fresh raspberries.

Notes

Raspberry Simple Syrup Recipe:
1/2 cup water
1/2 cup granulated sugar
1/2 cup fresh raspberries
