This Mediterranean Pasta Frittata is loaded with the delicious flavors of sun dried tomatoes, spinach, and feta cheese….and it’s a great way to use up leftover pasta! Perfect for breakfast, lunch, or even dinner!
Every now and then my kids just completely surprise me. And you know what? I love it. I love it when they say or do things that I clearly didn’t teach them…(within reason, of course)…because it means they’re becoming their own people. They’re thinking for themselves. They’re developing their own unique little personality. And it’s so fun to watch!
With Ellia, it’s often the things she teaches herself how to make. With Greta, it’s usually her sense of humor. With Myla, it’s often a new ability or funny idea she seems to pick up overnight. And with Nora? Well, I never know what to expect with Nora. Ha!
Which is why it didn’t really phase me when I met the mom of one of Nora’s friends last night, and she informed me that Nora likes to go by “Juliet” at school. Uh….say what!?? I have NEVER heard about this. Not even once. And you know what? It totally made me laugh!
In case you’re wondering, Juliet is her middle name. And her best little kindergarten friend goes by a shortened name. And based on how often we hear this friend’s name at home, I’m guessing the two are connected. Nora wanted to be just like Stella. Hence, Nora = Juliet.
If I had to guess, things will never be dull now that Nora’s in school. Because Nora likes to keep things interesting. And…so do I! Case in point: this Mediterranean Pasta Frittata. It has some unconventional flavors (sun dried tomatoes) and some unconventional ingredients (pasta). And you know what? I say YES!!! Yes to all of it….because this Mediterranean Pasta Frittata is delicious! It’s seriously packed with flavor, and best of all, it’s made with my favorite Phil’s Fresh Eggs.
What do I love about Phil’s Fresh Eggs? Well, pretty much everything. I love that they’re committed to producing cage-free eggs in a humane environment. I love that they feed their chickens a unique and wholesome feed. And, of course, I love that their eggs taste great. Which makes for a great tasting Mediterranean Pasta Frittata…with just the right amount of surprise.

Mediterranean Pasta Frittata
Ingredients
- 8 large Phil's Fresh Eggs
- 3/4 c. milk
- 1/2 tsp. salt
- 1/2 tsp. pepper
- 1 Tbsp. olive oil
- 2 c. cooked pasta
- 6 c. fresh spinach
- 1/2 c. diced red onion
- 1/3 c. julienne cut sun dried tomatoes in oil
- 4 oz. crumbled feta cheese
Instructions
- In a large mixing bowl, combine eggs, milk, salt and pepper. Whisk until smooth; set aside.
- Heat olive oil in a medium skillet. Add spinach and onions and saute until onions are tender.
- Spray a 10 inch deep dish pie plate with cooking spray.
- Layer cooked pasta, sautéed spinach and onions, sun dried tomatoes, and crumbled feta in pie plate.
- Pour egg mixture over the top.
- Bake at 350 degrees for 45 minutes or until center of frittata is set.

Hi Lori, I’m so sorry I didn’t get back to you on this in time for Good Friday! I believe I used penne when I made it, but any medium-sized noodle (or macaroni) would work!
