There is something about Strawberry Shortcake that brings back vivid memories of my childhood….of hot summer days, park & rec baseball games, our backyard at dusk, and the promise of a delicious end to the night! My mom used to make fresh shortcakes using Jiffy mix, and she would top them with sliced powdered sugar-sprinkled strawberries and vanilla ice cream. It was, and still is, one of my very favorite desserts!!
It should come as no surprise that I have a major sweet tooth….and for those of you who are like me, you know that a sweet tooth is not something that develops overnight! Dessert time has always been like a little taste of heaven to me….and it’s something I still treat myself to daily. Of course, I like to mix things up and put my own spin on them….but one thing I can guarantee is, if I’m eating it, it’s delicious!! (After all, it has to be worth it!!)
Well, when I saw a recipe for Lemon-Ginger Pound Cake in the April issue of All You Magazine, it looked like something that just might be worth it. And something that would definitely be perfect for spring. So I made it, and I tried it, and….sure enough….it was DELICIOUS!
Of course, being who I am, I couldn’t just leave the recipe alone….and with the weather warming up, my mind turned to none other than strawberry shortcake! Not only is strawberry shortcake something that everyone LOVES, but I just knew the lemon ginger pound cake would be the perfect substitute for the Jiffy mix shortcakes of my childhood.
Just for fun, I added one more of my favorite ingredients – lemon curd – and the results were amazing! These little “shortcake” cups are the perfect treat for spring or summer, and I love that they start with a deliciously simple, homemade pound cake from All You! *The recipe for Lemon Ginger Pound Cake was printed in the April issue of All You Magazine. I made slight modifications to the recipe, which are noted within.
Ingredients
- 3 c. all-purpose flour I used cake flour
- 1/2 tsp. baking soda
- 2 tsp. ground ginger
- 1/2 tsp. salt
- 2 sticks unsalted butter at room temperature
- 3 c. sugar
- 2 tsp. grated lemon zest
- 6 eggs at room temperature
- 1/2 c. minced crystallized ginger tossed with 2 tsp. flour (I substituted 1 tsp. ground ginger and omitted the flour)
- 2 tsp. vanilla extract
- 3/4 c. buttermilk
- 20-24 strawberries
- 1 c. heavy whipping cream
- 1/2 c. + 2 Tbsp. lemon curd
Instructions
Cake
- Preheat oven to 325 degrees. Butter and flour a 10-inch nonstick Bundt pan.
- Mix flour, baking soda, ground ginger and salt in a medium bowl.
- In a separate bowl, combine butter, sugar, and lemon zest and mix on medium-high speed until light, about 3 minutes.
- Beat in eggs one at a time.
- Add crystallized ginger (or additional ground ginger) and vanilla.
- Reduce mixer to low. Add one third of flour mixture, then half of buttermilk. Repeat, ending with flour mixture.
- Transfer batter to pan. Bake 60-70 minutes, or until a skewer inserted in cake comes out clean.
- Let cool in pan on a cooling rack for 15 minutes. Invert onto rack to cool fully.
Lemon Whipped Cream
- Combine heavy whipping cream and 2 Tbsp. lemon curd in a medium mixing bowl. Using chilled beaters, beat on high speed until stiff peaks form.
Shortcake Cups
- Cut a 1 1/2 inch slice of cake into cubes. Fill a small mason jar (or other similar-sized dish) about halfway full.
- Top with 1 Tbsp. lemon curd, approx. 4 sliced strawberries, 1/2 c. whipped cream, an additional 1 Tbsp. lemon curd, and 1 whole strawberry.
