Happy Labor Day weekend! Do you have anything fun planned? Around here, we are focusing much less on the fact that it’s Labor Day and much more on the fact that it’s the weekend of our annual birthday bash to celebrate all of our girls’ summer birthdays!
The bad news? It’s supposed to be storming all day tomorrow. Such a bummer for our super summer-themed summer party! The good news? By the end of tomorrow, it will all be over….which means we still have the rest of the weekend to relax and enjoy!
And, of course, eat leftovers!! It’s always so hard to know how much food to make for a party, so I just try to err on the side of too much. That way I can be sure no one will leave hungry….and I can guarantee there will be enough left over for us to enjoy for a few extra days. No reason the party has to end when everyone goes home, right??
So this year’s menu? Your typical picnic fare: sandwiches, chips, veggies, fruit, and lots of different salads! I’m doing a combination of old favorites and a couple new recipes, and I thought I’d share one of the new ones with you! This Fresh Green Bean Salad is something I knew I wanted to make as soon as my mom mentioned that green beans were on sale. Funny, I know…..but true! So I loaded up on green beans yesterday, and tomorrow I’ll feed the masses with this delicious concoction. I don’t think anyone will be disappointed….but if they are, there will be plenty of other salads to choose from! Cause that’s how we roll!

Ingredients
Salad
- 4 c. fresh green beans trimmed and cut into 1 1/2 inch pieces
- 2 c. sliced chopped yellow squash
- 2 c. grape tomatoes
- 1 c. chopped red onion
- 8 oz. feta cheese cubed
Dressing
- 1/2 c. olive oil
- 1/4 c. lemon juice
- 2 tsp. dried parsley
- 1 tsp. kosher salt
- 1 tsp. fresh cracked pepper
Instructions
- Combine all salad ingredients in medium bowl.
- Combine dressing ingredients and shake well to mix.
- Pour dressing over salad and stir gently.
