It’s a recipe my mom made when we were growing up, and one we always looked forward to. And every time I’ve made it for my family, it’s a HUGE hit.
I like to keep it simple, with just a few vegetables I know my kids approve of, but the great thing about this recipe is that you can completely personalize it according to your family’s tastes. It’s the perfect base for extra veggies, bacon, cheese… you name it. And you can serve it over pretty much anything!

🍗 Ingredients
The easiest way to make this recipe is using rotisserie chicken, but you can use any type of cooked chicken. If you’re starting with raw chicken breast, my favorite way to prepare it is to poach it. This involves placing it in a skillet, covering it with water, and bringing it to a boil. Once the water is boiling, reduce the heat to a simmer, cover the pan, and let it simmer for 12-15 minutes.
- 1 stick (1/2 c.) salted butter
- 3/4 c. onion, diced
- 3/4 c. red pepper, diced
- 8 oz. sliced mushrooms
- 1/2 c. flour
- 1 tsp. salt
- 2 c. chicken broth
- 2 c. milk
- 4 c. chopped, cooked chicken
- 1 can refrigerated biscuits
- fresh parsley, for garnish
📋 Instructions
This recipe comes together in minutes and involves nothing more than a little stirring. A few things to note – it’s important to let the flour cook for a few minutes with the vegetables in order to “cook off” the raw flour flavor. It’s also worth the extra few minutes to let the sauce thicken up in the final step… you won’t regret it!
- In a large skillet, melt butter over medium heat.
- Add diced onions, peppers, and mushrooms. Saute until tender-crisp.
- Stir in flour and salt, cook for 3 minutes, stirring constantly.
- Slowly add in the chicken broth and milk, stirring constantly, until mixture thickens (8-12 minutes).
- Stir in chicken.
- Spoon over prepared biscuits; season with salt, pepper, and fresh parsley as desired.
