As with any recipe, there are many different versions of this salad, but this is the combination we like best. It’s a simple combo of shredded carrots, apples, and raisins in a slightly sweet, creamy dressing.

🥕 Ingredients
I LOVE this recipe because it’s made with ingredients I almost always have on hand. Both carrots and apples are refrigerator staples, and the rest of the ingredients are pretty basic! You can either use whole carrots (peeled and grated) or buy matchstick carrots at the grocery store.
- 4 c. shredded carrots (whole carrots or 1 bag of matchstick carrots)
- 1 c. shredded apple (1 medium apple)
- 1/3 c. raisins
- 1/4 c. mayo
- 1/4 c. sour cream (substitute Greek yogurt)
- 2 Tbsp. lemon juice
- 1 Tbsp. honey
- 1/4 tsp. salt
- 1/4 tsp. ground ginger

Aside from the grating, which shouldn’t take long, this recipe couldn’t be easier to make. It’s as simple as measuring and stirring… and voila! An easy, delicious side dish that’s ready in no time!
- In a medium mixing bowl, combine shredded carrots, apples, and raisins.
- In a separate small bowl, combine remaining ingredients.
- Stir dressing into carrot mixture until combined.

Leftover salad can be stored in an airtight container in the refrigerator. For best flavor, it should be eaten within 2-3 days.
