Ingredients

  • 4 cups shredded carrots whole carrots or 1 bag of matchstick carrots
  • 1 cup shredded apple 1 medium apple
  • 1/3 cup raisins
  • 1/4 cup mayo
  • 1/4 cup sour cream substitute Greek yogurt
  • 2 Tablespoons lemon juice
  • 1/2 Tablespoon honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground ginger

Instructions

  • In a medium mixing bowl, combine shredded carrots, apples, and raisins.
  • In a separate small bowl, combine remaining ingredients.
  • Stir dressing into carrot mixture until combined.
