Potato Skins stuffed with creamy buffalo chicken and topped with cheddar cheese, blue cheese, and a dash of hot sauce. For those who like it a little bit hot!

Happy Friday! The last day of what has been an important week. The first week of September, the first week of school, the first week of me being parent to one (!) for most of the day….. It feels a little bit like order has been restored around here. Everyone seems just a little bit happier now that we are back in a routine, Nora has gotten a little more attention than she is used to, and I have had a little more time to be creative in the kitchen! This first week has been good to us….and by the end of it, I have learned some important things. Like…..

Nora is much better behaved when she’s not with her sisters! Most likely because she isn’t arguing over food or toys or sitting on my lap….or trying to keep up with them and getting frustrated that she can’t! I’ve been pleasantly surprised by how pleasant she has been this week…..cue {relief}!!

Greta is loving kindergarten (no surprise there) but when we ask her who her new friends are, she’s only giving us boys’ names! We asked her if there are any girls in her class and her response was, “Yeah, a few I think….” At the same time, she is suddenly wanting to wear only dresses and skirts to school instead of her usual more tomboyish wardrobe. Lesson learned? Greta is an anomaly. There is seriously no figuring that girl out.

Ellia is even more of a worrier than I realized! On her first day of school she came home worried about all the new things they would be starting the next day….and even more worried about a drawing of a friend they had been asked to do that day! (“I don’t know how to draw other people…I only know how to draw myself!!”) When I told her everything doesn’t have to be perfect, she said, “I just WANT it to be perfect!” Hmmmmmmm…..learning all the ways she is just like me……

As for myself, I’m learning how much difference a week can make! So much has changed in our lives in just one short week….including my ability to notice it. Going from three kids down to one will do that, I guess….and for now, it feels like a welcome change. Another welcome change? The fact that I am excited for our BUSY weekend coming up!! It’s been a long time since I’ve felt excited for a busy weekend…..(in the summertime, all I want on weekends is a break!!) But now I can look forward to soccer and my sister in law’s baby shower and a night out with Jorden and dinner with his family…..and a chance to spend time with my kids. And hopefully catch a little bit of the Packer game Sunday….complete with these Buffalo Chicken Potato Skins. They are gooey and delicious, with just the right amount of kick. Definitely something to look forward to…..(just in case I wasn’t fully convinced).

Buffalo Chicken Potato Skins

Ingredients

• Buffalo Chicken Potato Skins
• 3 large baked potatoes cooled and quartered
• 1 1/2 c. cooked shredded chicken (I used rotisserie)
• 1/3 c. sour cream
• 3 oz. cream cheese softened
• 3 Tbsp. hot sauce I used Frank's Red Hot
• 1/2 c. shredded cheddar cheese
• 1/8 to 1/4 c. crumbled blue cheese enough to sprinkle a little on top of each

Instructions

1. Scoop out inside of each potato wedge. Place wedges on a large, lightly greased baking sheet.
2. In a small bowl, combine chicken, sour cream, cream cheese, and hot sauce and mix thoroughly.
3. Divide mixture evenly among potato skins.
4. Bake at 350 degrees 10 minutes.
5. Remove wedges from oven; sprinkle each with 2 tsp. shredded cheddar cheese and top with a sprinkle of blue cheese.
6. Bake an additional 2-3 minutes or until cheese is melted.
