Mac & cheese. It’s my kids’ absolute favorite. They love it for lunch or dinner, they order it at restaurants, and yes, they have even asked to have it for breakfast. At times it seems like the ONLY thing they’ll eat….(and, at times, I’m sure it probably is)! There’s just something about it they can’t get enough of.
I know I’m not alone in this, especially since every kid who ever comes over decides on mac & cheese for lunch. And I’m definitely not complaining. It’s quick and easy and feeds a crowd….and on the off chance that my kids want to mix it up from time to time, it couldn’t be easier to transform. The possibilities are endless!
Of course, you have to know your crowd. What types of flavors they’ll go for, what will keep them coming back for more. My kids love the Horizon Shells & White Cheddar and, lucky for me, they’re used to some bold flavors. As soon as I told them this was just like the dip, they were willing to try it! And….success!!

- 2 boxes Horizon Organic Pasta Shells & White Cheddar Cheese
- 5 oz. chopped frozen spinach, thawed
- 1 c. canned artichoke hearts, chopped
- 1/2 c. shredded smoked gouda cheese
- 1/2 c. grated parmesan cheese
- 1/2 tsp. garlic powder
- Prepare Mac & Cheese according to package instructions
- Add remaining ingredients and stir to combine
