Delicious parfaits, layered with no-bake fluffernutter cheesecake, mini chocolate chips, and edible chocolate chip cookie dough. All your dreams, come true.
You’d think my kids are deprived, the way they talk. About candy and snacks and who gets what in their school lunches. Nearly every day I hear about the fact that Rianna has a bin full of snacks in her locker and Brooke gets Fruit by the Foot ALL the time and Ava’s mom lets her bring candy to school and can they please, please, please have potato chips in their lunch!?
But the worst of all is Rebecca. Because Rebecca gets sandwiches with peanut butter and marshmallow fluff, and that is so NOT fair! Yes, Rebecca gets Fluffernutter sandwiches, and Ellia has taken note. And she wants one….daily! Now here’s the deal. With all the baking and treat-making I do, I already feel like the girls are CONSTANTLY sampling sweets! Way more than they should be! So the very last thing I can justify is sending Ellia to school with a Fluffernutter sandwich!
Of course, in my kids’ minds, the treats they sample at home do NOT translate to satisfaction. In their minds, they NEVER get ANYTHING good….! And let me tell you, I hear about it. To be fair, though, my kids haven’t tried my latest creation – these Fluffernutter Cheesecake Cookie Dough Parfaits. Filled with everything their little hearts might desire: creamy fluffernutter cheesecake (an ode to Rebecca), miniature chocolate chips, and deliciously perfect edible cookie dough (every kid’s dream!) Yep, these little treats are everything dreams are made of, in one little bite of pure deliciousness.

Ingredients
Fluffernutter Cheesecake
- 1 package 8 oz. cream cheese, softened
- 1 jar 7 oz. marshmallow fluff
- 1/2 c. creamy peanut butter
- 1 tsp. vanilla
Cookie Dough
- 1 stick unsalted butter softened
- 3/4 c. light brown sugar
- 1 tsp. vanilla
- 1 c. flour
- ½ tsp. salt
- 2 Tbsp. milk
- ½ c. mini chocolate chips
- extra mini chocolate chips for layering
Instructions
For the cheesecake:
- Combine all ingredients in mixing bowl and mix on medium-high speed until well blended.
For the cookie dough:
- Cream butter and sugar; add vanilla and mix to incorporate.
- Add flour and salt and mix thoroughly. (Dough will be crumbly)
- Stir in 2 Tbsp. milk and mini chocolate chips.
Assembling Parfaits:
- Layer cheesecake, mini chocolate chips, and cookie dough in desired proportions.




You hit it out of the park again with this one Cathy! I LOVE it! And your kids sound like my husband – he’s always complaining I give all the good stuff away. Problem is, if I don’t, I’m the one that eats it all 🙂

I always hear about the other food at school too especially the chips and cookies that kids supposedly bring as their “healthy snack”. Your parfait looks delicious! Pinned!
Oh, my goodness! These parfaits are the bomb! I love every single thing about them. Fluffernutter, cheesecake, chocolate chips…this is the things dreams are made of. And I had to giggle while reading your post…you see my kids are the ones bringing the fluffernutter sandwiches to school and telling all the kids of the amazingness. This is such a fun treat Cathy! Your kids ARE lucky! But I know what you mean, my kids seem to take for granted all the treats we have daily! It kills me when they get envious of Fruit Roll Ups!

These look so delicious! This would certainly make my girls beyond thrilled! Oh and for the record, I think those same girls go to my kids school as well – who gets to bring Sour Patch for snack? Or Doritos? Nope not my kids….ever.
