What is a Po Boy?
A po boy (also known as po’ boy or po-boy), is a traditional sandwich from Louisiana. It’s often made with some type of fried seafood, such as shrimp, crawfish, oysters, or crab, combined with lettuce, tomatoes, and remoulade sauce. Po boys are served on crusty French bread.
Ingredients:
- 1 loaf French bread or 4 French rolls
- 2 lbs. shrimp
- 1 c. buttermilk
- 2 large eggs
- 1 1/2 c. all purpose flour
- 1/2 c. cornmeal
- 2 Tbsp. Cajun or Creole seasoning
- 1/2 c. Hellmann’s Real Mayonnaise
- 1 Tbsp. stone ground mustard
- 1 Tbsp. sweet relish
- 1 tsp. lemon juice
- 1 tsp. hot sauce
- Oil (for frying)
- 1-2 tomatoes, thinly sliced
- 1 c. shredded lettuce
Instructions:
- Start by frying the shrimp. Combine buttermilk and eggs in a medium mixing bowl. In a separate mixing bowl, combine flour, cornmeal, and Cajun seasoning. Dip shrimp in buttermilk mixture, then coat with flour mixture.
- Fry in hot oil until golden brown and crispy.
- Prepare remoulade by combining Hellmann’s Real Mayonnaise, mustard, relish, lemon juice, hot sauce, and Cajun seasoning in a small mixing bowl.
- Slice tomatoes and lettuce.
- Assemble sandwiches in French bread.
- Enjoy!
Where did the name come from?
Po Boys were originally made by the Martin brothers, Bennie and Clovis, who owned Martin Brothers Coffee Stand and Restaurant in the New Orleans French Quarter. The restaurant drew in street car workers and union members, and when the street car workers went on strike in 1929, Bennie and Clovis pledged to give them free meals until the strike was resolved. In order to do so, they created a sandwich that was inexpensive to make, yet would satisfy the strikers throughout the day. When a striker came by to get a sandwich, they would call out, “here comes another poor boy,” and that’s how the “po boy” sandwich came to be.
How do you make Po Boy Sauce?
Combine mayonnaise, mustard, relish, lemon juice, hot sauce, and Cajun seasoning blend. Mix with a spoon until blended. You can experiment with the amounts of each ingredient (e.g. for a spicier sauce, add more hot sauce and/or Cajun seasoning).
What kind of bread do you use?
Po Boys are traditionally made on New Orleans French bread, which is known for its crusty, flaky exterior and soft, fluffy interior.

Shrimp Po Boy
Ingredients
- 2 lbs. medium shrimp peeled and deveined
- 1 c. buttermilk
- 2 eggs
- 1 1/2 c. all purpose flour
- 1/2 c. cornmeal
- 2 Tbsp. Cajun or Crele seasoning
- Canola or vegetable oil for frying
- 1/2 c. Hellman's Real Mayonnaise
- 1 Tbsp. stone ground mustard
- 1 Tbsp. sweet relish
- 1 tsp. lemon juice
- 1 tsp. hot sauce
- 1/4 tsp. Cajun or Creole seasoning
- 4 French rolls split horizontally
- 1-2 tomatoes thinly sliced
- 1 c. shredded lettuce
Instructions
- 1. Attach a deep-fry thermometer to the side of a heavy pan. Add enough oil to measure 2". Heat oil over medium-high heat to 350°.
- 2. While oil is heating, combine buttermilk and eggs in a large bowl; whisk well.
- 3. In a separate large bowl, combine flour, cornmeal, and seasoning.
- 4. Working in batches, dip shrimp in buttermilk mixture, then in flour mixture until fully coated.
- 5. Drop shrimp into hot oil and fry until golden brown and crispy, about 5-6 minutes.
- 6. Use a slotted spoon to remove shrimp from oil and transfer to a wire rack to drain.
- 7. Prepare remoulade by combining Hellmann's Real Mayonnaise, mustard, relish, lemon juice, hot sauce, and seasoning.
- 8. Assemble sandwiches on French rolls with shrimp, lettuce, tomatoes, and remoulade.
