Sausage & Pepper Sandwiches
You know how there are certain foods that instantly transport you back to childhood? Foods where just the smell is enough to make you feel like you’re back in Mom’s kitchen? I’m pretty sure everyone has them….and part of what makes them so special is that everyone’s are different. For me, it’s things like homemade pizza and banana bread and peanut butter frosting crackers and apple cake….things my mom or dad made regularly, things we loved and looked forward to. And these Sausage & Pepper Sandwiches are definitely on the list!
My parents would probably laugh if they heard me include Italian Sausages on my list of fond childhood memories. Because there was a long stretch of time, mid-childhood to early adulthood, when I didn’t eat any meat at all. And especially not sausages. But…well…things change. And somewhere along the line, I rediscovered Italian Sausage. And I’m SO glad I did.
So what makes these Sausage & Pepper Sandwiches so amazing? I don’t know where to even begin. For me, it’s the combination of the sausages and marinara sauce, the slight crunch of the peppers, the way the sauce soaks into the bread. And the fact that it’s SO EASY to make definitely doesn’t hurt, either! I love a meal that comes together in 30 minutes and uses less than 10 ingredients….don’t you? And I especially love a meal that can double as an easy option for game days and get togethers.
Sausage & Pepper Sandwiches – An easy weeknight meal
Well, these Sausage & Pepper Sandwiches have it all. And, best of all, they’re super versatile! You can use turkey sausage instead of regular Italian sausage, you can eat them with or without the sandwich roll, and if you’re entertaining, you can make them ahead and keep them warm in the crock pot. And…kids love them. And will probably have their own fond childhood memories of them someday! Because good food is like that, you know?
Sausage & Pepper Sandwiches
Ingredients
- 2 Tbsp. olive oil
- 10 Italian Sausage links I used 2 packages Jennie-O Italian Turkey Sausage
- 1 green pepper sliced
- 1 red pepper sliced
- 1/2 red onion sliced
- 1 25 oz. jar marinara sauce
- 1 tsp. dried oregano
- 1 tsp. dried basil
- 1 bay leaf
- 10 sandwich rolls optional
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add sausages and cook, turning occasionally, until evenly browned and cooked through (15-20 mins).
- Add remaining ingredients, stir, and cover.
- Reduce heat to low and cook, covered, 10-15 minutes or until peppers are tender-crisp.
- Remove bay leaf before serving.
- Serve in sandwich rolls OR as is.

Love sausage and peppers. I use more onions with mine. Especially with 10 sausages. I usually use two large onions and two or three peppers and with that amount of sauce it makes a little bigger sandwich. Since it’s just more veggies, it’s not adding calories to your sandwich. A yummy lunch or dinner. Thanks !!

So I feel like I should leave a review because there are only lovely comments of wanting to try this recipe. I sauted the peppers and onion a few minutes to give a better texture of a sausage and peppers sandwich. Also I used spicy sausage links. I also covered and cooked the sausages for a perfect cook. I used one package of links..and one jar 24oz sauce.
