All the flavors of a root beer float… in a delicious frozen treat! These Root Beer Float Popsicles are made with just 3 ingredients and ready in no time at all. One of our summertime favorites!

Who doesn’t love a good old fashioned root beer float? I mean… seriously! There’s something about cold, crisp root beer combined with creamy vanilla ice cream that’s pretty much perfection. It’s perfectly delicious, perfectly refreshing, and perfectly easy to make.
So naturally, I want it in as many ways as I can get it. Including creamy Root Beer Float Dip AND these easy 3-ingredient Root Beer Float Popsicles!
Of course, it’s hard to imagine any way to make a root beer float better… but I decided to try. I took my favorite part of a float – the slushy stuff when the two flavors are completely melted together – and added a little bit of crunch. If you ask me, ice cream is ALWAYS better with a little bit of crunch… and what better way to add crunch than with vanilla wafers?
The end result is a deliciously creamy frozen root beer float that has just the right amount of crunchy cookie goodness. And in addition to being perfectly delicious, perfectly refreshing, and perfectly easy to make… it’s also perfectly portable and perfect for making in advance!

what you’ll need for this recipe
Ice cream – I used 1 1/2 cups frozen vanilla ice cream. Use any type you have on hand (old fashioned vanilla, vanilla bean, etc.)
Root beer – I combined the ice cream with 3/4 cup cold root beer. I like to use cold soda so it keeps the ice cream slushy, but room temperature will work, too.
Vanilla wafers – I added 12 vanilla wafers, crumbled. Add more or less, to taste.

how to make root beer float popscicles
Combine the ice cream and root beer. In a medium bowl or glass measuring cup, combine the ice cream and root beer. Whisk until smooth and creamy.
Crumble in the cookies. Stir in the crumbled cookies.
Divide and freeze. Divide the mixture between 8 small dixie cups (about 1/4 cup each.) Add a popsicle stick to each cup and freeze 4 hours or until completely frozen. *Pro tip: check the popsicle sticks after 15-20 minutes of freezing to be sure they’re standing up straight.

Recipe Variations
- Use any flavor of ice cream
- Substitute frozen yogurt for a lighter treat
- Use any flavor of soda (my kids love orange!)
- Omit the vanilla wafers OR substitute Oreos, chocolate chip cookies or any of your favorites
- Add mini chocolate chips or white chocolate chips
- Adjust the proportions to taste
- Make them in any type of popsicle mold (the dixie cups are just easy to have on hand!)

Tips & Tricks
For the best results, use cold root beer. Warm root beer will melt the ice cream and make it harder for the sticks to stand up.
Check the popsicle sticks after 15-20 minutes of freezing to be sure they’re standing up straight.
Dip the frozen cups in warm water for 5 seconds to loosen the edges for removal.
