Root Beer Float Popsicles

All the flavors of a root beer float... in a delicious frozen treat! These Root Beer Float Popsicles are made with just 3 ingredients and ready in no time at all. One of our summertime favorites!

Ingredients

  • 1 1/2 cups vanilla ice cream
  • 3/4 cup root beer
  • 12 vanilla wafers crumbled

Instructions

  • In a medium bowl, combine the ice cream and root beer. Whisk until smooth and creamy.
  • Crumble cookies and stir into mixture.
  • Divide the mixture between 8 small dixie cups (about 1/4 cup each.)
  • Add a popsicle stick to each cup and freeze 4 hours or until completely frozen. *Pro tip: check the popsicle sticks after 15-20 minutes of freezing to be sure they're standing up straight.

Tips & Tricks

  • For the best results, use cold root beer. Warm root beer will melt the ice cream and make it harder for the sticks to stand up.
  • Check the popsicle sticks after 15-20 minutes of freezing to be sure they're standing up straight.
  • Dip the frozen cups in warm water for 5 seconds to loosen the edges for removal.

Recipe Variations

  • Use any flavor of ice cream
  • Substitute frozen yogurt for a lighter treat
  • Use any flavor of soda (my kids love orange!)
  • Omit the vanilla wafers OR substitute Oreos, chocolate chip cookies or any of your favorites
  • Add mini chocolate chips or white chocolate chips
  • Adjust the proportions to taste
  • Make them in any type of popsicle mold (the dixie cups are just easy to have on hand!)
