    Peppermint Bark Haystacks

    If you love Peppermint Bark, you'll LOVE these delicious Peppermint Bark Haystacks! They combine two Christmas classics in one delicious treat that's easy to make and fun to eat. Just 5 ingredients and 10 minutes is all you need for these festive, fun little bites that are perfect for holiday snacking...and great for gifting, too!

    You guys! We're in the home stretch! And I'm in panic mode. I literally woke up this morning thinking about ALL the things I still have to do before Christmas.

    And...I had a mild heart attack. For real. I don't know what it is about this year...but I could not be further behind. Time to buckle down and get. it. done.

    So I hopped on Amazon and bought a few last minute gifts, FINALLY ordered Christmas cards (or should I say New Years cards), and made a list. To tackle. Today. One of these years I'll be more on top of life....right?

    On my list: finish Christmas shopping, once and for all. Address and mail Christmas cards. And....by all means....make some Christmas treats!

    And you better believe these Peppermint Bark Haystacks will be one of the first things I make. Because who doesn't LOVE peppermint bark....and who doesn't LOVE haystacks!? They're both Christmas staples, a necessary part of any holiday season. And now you can enjoy them both at the same time!

    You might know about my love of haystacks from my White Chocolate Ting a Lings, or maybe from my White Chocolate Peppermint Mocha Haystacks. They're such an easy treat to make.....and even easier to eat. And they make the perfect addition to any holiday cookie plate.

    And when you combine them with another Christmas favorite like peppermint bark, you seriously can't go wrong. These Peppermint Bark Haystacks are coated in peppermint flavored white chocolate, dipped in milk chocolate, and topped with crushed candy canes.

    Fast, easy, and insanely delicious.

    Peppermint Bark Haystacks

    Peppermint Bark Haystacks

    Total Time: 10 minutes

    If you love Peppermint Bark, you'll LOVE these delicious Peppermint Bark Haystacks! They combine two Christmas classics in one delicious treat that's easy to make and fun to eat. Just 5 ingredients and 10 minutes is all you need for these festive, fun little bites that are perfect for holiday snacking...and great for gifting, too! 

    Ingredients

    • 3 cups chow mein noodles
    • 16 oz. white chocolate (I used CandyQuik)
    • ½ tsp. peppermint extract
    • 3 candy canes, crushed
    • 3 oz. milk chocolate

    Instructions

    1. Melt white chocolate in the microwave or in a small saucepan over low heat, stirring regularly to prevent burning.
    2. Stir in ½ tsp. peppermint extract.
    3. Combine melted white chocolate with chow mein noodles; stir until evenly coated.
    4. Drop by spoonfuls onto wax paper; top with crushed candy canes. Set aside to dry.
    5. Once haystacks are dry, melt milk chocolate and dip bottoms of haystacks into milk chocolate. Turn upside down to dry.
