These Mango Popsicles are fruity, creamy, and so delicious! They come together in minutes and are the perfect way to cool off on a hot summer day!
So we have a new thing going on in our lives this summer. A new thing that just so happens to be a very old thing: an ICE CREAM TRUCK! As you an imagine, the kids are in heaven. I'll never forget the first time it passed by our house, its age-old music playing on repeat, tantalizing every kid in every house for miles around. I was upstairs with the girls, knee deep in the dreaded task of swapping out winter clothes for summer ones....and suddenly, they heard it. First quietly and then louder and louder, literal music to their ears.
They rushed downstairs, ran out the door, and quickly rushed back in asking for money. And as much as I cried just a little bit handing over $15 for ice cream, of course I couldn't say no. Who can resist an ice cream truck!? And, to be honest, they had probably earned it. (If you've ever swapped out clothes for the season, you understand.)
Since then, we've definitely seen the ice cream truck around, and the girls have definitely been just as excited as they were that first day. Of course, we can't say yes to the it EVERY time.....so I've learned to keep the freezer stocked! With ice cream and fudge bars and all things frozen and sweet. Like these delicious Mango Cream Popsicles!
If your kids are anything like mine, they're obsessed with mango. Especially fresh mango, and especially when it's deliciously in season....like right now! I love the combination of mango and cream, and I love the way these popsicles feel like a SERIOUS treat. A mix between ice cream and popsicles. Perfect for summer. And for fending off ice cream truck cravings.
Mango Cream Popsicles
Ingredients
- 1 fresh mango cut into 1 inch pieces
- ½ c. 2% milk
- ¼ c. heavy cream
- 2 Tbsp. powdered sugar
- ¼ tsp. vanilla extract
Instructions

Combine all ingredients in a blender and puree until smooth.

Pour into popsicle molds and freeze.

These ARE delicious. And I am posting AFTER making them ๐ . I made only one substitution: I used 1 T of Pyure (like Truvia, a stevia sugar substitute) instead of 2 T of powdered sugar. Stevia is a lot sweeter than sugar ... THANKYOUTHANKYOU! I will next try them with strawberries ๐
