Creamy Peanut Butter Fudge stuffed to the max with edible chocolate chip cookie dough and topped with mini chocolate chips.
Let’s talk for a minute about being stuffed. Not typically something that’s super enjoyable! Think about it….who likes the feeling of being stuffed after an enormous meal, or the struggle to stuff yourself into a pair of skinny jeans, or trying to stuff one more thing into your already overstuffed freezer, or those times when you have to stuff one too many people into a small space (like an elevator!?) Not this girl!! Let’s face it! In MOST realms of life, being stuffed is NOT a good thing!!
BUT. When it comes to the world of food, being stuffed is an entirely different story. In the world of food, there’s almost nothing better than being stuffed…! Some of the very BEST foods are those that are stuffed – think jalapeno poppers, stuffed mushrooms, Thanksgiving turkey, stuffed burgers, stuffed French toast, stuffed shells…..the list goes on and on! If you ask me, stuffing something takes it from good to great, from ordinary to extraordinary, from delicious to delectable!
And as long as we’re going to eat something….it might as well be delectable, right? That’s my theory with most foods, but especially when it comes to desserts. They MUST be worth the calories! Now, fudge is one of those things that is almost ALWAYS worth the calories, but just to be sure, I decided to stuff this creamy peanut butter one with none other than edible (egg-free) cookie dough….for a treat that is not just worth it, but so delicious you might dream about it! (Exactly the way desserts should be!!)

Ingredients
Cookie Dough
- 1 stick unsalted butter softened
- 3/4 c. brown sugar I used dark brown sugar for more color contrast with the fudge
- 1 tsp. vanilla
- 1 c. flour
- 1/2 tsp. salt
- 2 Tbsp. milk
- 1/2 c. mini chocolate chips
Fudge
- 1 can 14 oz. sweetened condensed milk, divided in half
- 16 oz. vanilla Candiquik divided in half
- 1/2 c. peanut butter divided in half
- 1/4 c. mini chocolate chips
Instructions
Cookie Dough
- Cream butter and sugar; add vanilla and mix to incorporate.
- Add flour and salt and mix thoroughly. (Dough will be crumbly.)
- Stir in 2 Tbsp. milk and mini chocolate chips.
Fudge
- Pour 1/2 can of sweetened condensed milk into a small saucepan and heat slightly over low heat.
- Add 8 oz. vanilla Candiquik and 1/4 c. peanut butter and stir over low heat until melted and smooth.
- Pour into 8x8 inch pan that has been sprayed lightly with nonstick cooking spray.
- Refrigerate until firm.
- Once firm, spread cookie dough on top of fudge layer and press down completely.
- Repeat fudge steps with remaining fudge ingredients; pour melted mixture over cookie dough layer.
- Sprinkle with 1/4 c. mini chocolate chips.
- Refrigerate until firm. Cut into pieces.
