So we’re finally there. Summer break is SO close I can taste it. And to be honest, I’m not exactly sure how I feel about it! Excited? Terrified? Exhausted? Happy? Yes, yes, yes, and yes. I feel all of the above….on a daily basis….and I’m pretty sure I’m the same as every single other mom who’s ever existed. Summer break is good, bad, and everything in between. Time to buckle up!

Of course, when you’re a kid, summer break is EVERYTHING. As it should be….right? It’s the one time of year when everything is centered on fun kid activities. And heaven knows our schedule is full of them! Between Girl Scout camp and swimming lessons and piano lessons and day camp…I feel like we’re at the point where any more would start to feel like too much. For the kids….and for me!

Let’s be honest….we’re already teetering on that point. And if there’s one thing I feel strongly about, it’s that summer break can’t be just for the kids! No, if I want to maintain any level of sanity while I’m home with 4 kids for 3 months straight, I’m going to NEED to make time for myself. And my friends. And my own fun activities!

Ingredients

• 2 c. vanilla ice cream
• 1/2 c. Chila 'Orchata
• 1/4 c. espresso or extra strong coffee
• 1/2 tsp. cinnamon
• whipped cream

Instructions

1. Combine all ingredients in a blender; blend until smooth.
2. Top with whipped cream and sprinkle with cinnamon.
