Rich, buttery Apple Toffee Blondies….made with fresh apples and a sprinkle of toffee….and lightened up with Truvia®! So delicious, and just in time for fall.
They always say if you want the truth, ask a child. And I would have to agree….especially if that child is a 4 year old! Want to know how you look? Or how your food tastes? Or what someone really thinks of your drawing? Just ask Nora. She’ll give it to you straight.
Now, when you have a family of all girls, this doesn’t always go over so well. Because, well, FEELINGS! Ellia and Greta’s are always getting hurt….at the hands of their sister and her truth-telling. And you better believe I am hearing about it.
But. For as much conflict as Nora’s {brutal} honesty causes….she’s also good for a good laugh every now and then. Like the other night, at dinner, when she was asking relentlessly about having dessert. And when Jorden stepped in to answer? She looked at him incredulously and said, “Uh, Dad…..Mom’s in charge around here….” Like I said. If you want the truth…..
The truth is that Mom’s in charge! And thank goodness…..because while Dad is a sucker for fast food and sugary drinks, Mom is all about fresh fruit and keeping the sugar to a minimum. Which is exactly where these Apple Toffee Blondies come in. They’re completely delicious, just the way kids like them, but lower in sugar, thanks to Truvia® Brown Sugar Blend! And if you want the low down on how they really taste….just ask Nora. (She couldn’t stop eating them!)
Apple Toffee Blondies
Ingredients
- 3/4 c. butter
- 1 c. Truvia® Brown Sugar Blend
- 1/2 tsp. salt
- 1 egg
- 1 Tbsp. vanilla
- 1 1/2 c. flour
- 1/2 tsp. baking powder
- 1 c. grated apple
- 1/2 c. toffee chips
Instructions
- In a medium saucepan, combine butter, Truvia® Brown Sugar Blend, and salt.
- Cook, stirring, over medium heat until butter is melted and Brown Sugar Blend is dissolved.
- Cool 10-15 minutes.
- Add egg and vanilla; then add flour and baking powder and stir until combined.
- Stir in grated apple and 1/4 c. toffee chips.
- Pour into greased 9x13 inch pan.
- Bake at 350 degrees for 30 minutes.
- Remove from oven; sprinkle with remaining toffee chips and bake an additional 5 minutes.
