Do you ever feel like carrots are one of the most underrated vegetables out there? They seem to be something that most of us have in our fridge most of the time… yet it’s so easy to forget just how versatile they really are.

Carrots are delicious roasted, candied, and baked into delicious treats. And they’re especially delicious in this sweet and savory Carrot Salad.

As with any recipe, there are many different versions of this salad, but this is the combination we like best. It’s a simple combo of shredded carrots, apples, and raisins in a slightly sweet, creamy dressing.

I LOVE this recipe because it’s made with ingredients I almost always have on hand. Both carrots and apples are refrigerator staples, and the rest of the ingredients are pretty basic! You can either use whole carrots (peeled and grated) or buy matchstick carrots at the grocery store.

  • 4 cups shredded carrots (whole carrots or 1 bag of matchstick carrots)
  • 1 cup shredded apple (1 medium apple)
  • 1/3 cup raisins
  • 1/4 cup mayo
  • 1/4 cup sour cream (substitute Greek yogurt)
  • 2 Tablespoons lemon juice
  • 1/2 Tablespoon honey
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground ginger

Aside from the grating, which shouldn’t take long, this recipe couldn’t be easier to make. It’s as simple as measuring and stirring… and voila! An easy, delicious side dish that’s ready in no time!

  1. In a medium mixing bowl, combine shredded carrots, apples, and raisins.
  2. In a separate small bowl, combine remaining ingredients.
  3. Stir dressing into carrot mixture until combined.

Recipe Variations

Here are some of our favorite ways to jazz up this salad. Feel free to try any or all of them… or come up with your own!

  • Substitute 1 c. crushed pineapple for the apple
  • Add 1/3 c. chopped walnuts
  • Add 1/4 – 1/2 c. shredded coconut
  • Substitute craisins for raisins
  • Add a dash of ground cinnamon

storage tips

Leftover salad can be stored in an airtight container in the refrigerator. For best flavor, it should be eaten within 2-3 days.

  1. I have never had a carrot salad before, and I feel like I have been missing out! I love all the textures and flavors. Can’t wait to give this one a try.

    This came out way too sweet. If I make again, I would probably eliminate (or reduce) the honey and use a different apple. I used a Honeycrisp apple. So, I added some black pepper, which helped.
