I partnered with Crystal Farms to bring you this recipe. Thank you for supporting the brands that make Lemon Tree Dwelling possible!

Can we talk for a minute about the dinnertime rut? Any why it’s SO easy to get into one? It’s been on my mind lately, with the start of the school year just around the corner…and even though I’d love to say this year will be different, I’m pretty sure it will be the same. Exactly like every. other. year.

And I KNOW it’s not just me. It’s my sisters and my neighbors and my friends….and when I was growing up? It was my mom! Dinnertime has always been a problem. Which is somehow both comforting and discouraging all at the same time. But. Just because it’s a problem doesn’t mean there’s no solution. And my solution? CHEESE.

Seriously, when it comes to dinners my family will gobble up, the common denominator is always cheese. And our FAVORITE, hands down, is Crystal Farms® Cheese. We love it, not only because it’s produced locally in Lake Mills, Wisconsin, but because Crystal Farms® is committed to providing the highest quality products to its consumers.

Their cheeses are made with few preservatives, offer a rich source of calcium, and they’re gluten-free and lactose tolerant. And…they taste amazing!

And I must say…their Shredded Marble Jack is the PERFECT topping for these BBQ Chicken Enchiladas. Paired with shredded chicken, bacon, barbecue sauce, onions, and cilantro…..there’s really nothing more delicious. These BBQ Chicken Enchiladas are the BEST way to avoid the dinnertime rut.

Or….if you’re already in one? A guaranteed way to get out of it. I can see myself adding BBQ Chicken Enchiladas to our regular dinner rotation. And when we get tired of enchiladas? Well, let’s be honest. That’s never going to happen!

  1. I should pick up a rotissere from Costco and make this for dinner tonight! My boys will gobble them up! So much cheesy goodness!!

  2. My go to is tuna casserole, it is so quick and easy to put together at anytime that you have a few minutes!

  3. 5 stars
My go-to dinner on a weeknight is something pulled from the freezer. Time is usually too short on the weekdays, especially during school, to take three hours cooking and cleaning!!
