BBQ Chicken Enchiladas

These BBQ Chicken Enchiladas are EVERYTHING!! Loaded with rotisserie chicken, bacon, barbecue sauce, and gooey cheese, they’re packed with delicious flavor and sure to become a new family favorite!

Can we talk for a minute about the dinnertime rut? Any why it’s SO easy to get into one? It’s been on my mind lately, with the start of the school year just around the corner…and even though I’d love to say this year will be different, I’m pretty sure it will be the same. Exactly like every. other. year.

And I KNOW it’s not just me. It’s my sisters and my neighbors and my friends….and when I was growing up? It was my mom! Dinnertime has always been a problem. Which is somehow both comforting and discouraging all at the same time. But. Just because it’s a problem doesn’t mean there’s no solution. And my solution? CHEESE.

Seriously, when it comes to dinners my family will gobble up, the common denominator is always cheese. And our FAVORITE, hands down, is Crystal Farms® Cheese. BBQ Chicken Enchiladas

Ingredients

• 8 oz. bacon
• 1 c. chopped red onion
• 1 rotisserie chicken
• 1 c. bbq sauce, divided
• 8-10 small (6 inch) tortillas
• 8 oz. Crystal Farms Shredded Marble Jack Cheese
• cilantro, for garnish

Instructions

1. Chop bacon into small pieces; cook with onion.
2. Stir in rotisserie chicken and ½ c. bbq sauce.
3. Fill & roll tortillas.
4. Top with ½ c. bbq sauce and shredded cheese.
5. Cover with foil.
6. Bake at 350 degrees 30 minutes, removing foil for last 5-10 minutes.
