And of course it can’t be good habits….like working out or volunteering or cleaning my kitchen. No, it’s always habits I’d rather not have. And mostly….they’re related to food. Our latest food related habit, that started out as an occasional treat but has somehow become the thing we HAVE TO HAVE!? Takeout! I seriously can’t get enough of it!
And it makes perfect sense that takeout would be our “thing”…since we rarely go out, and ordering takeout is the next best thing. I know it’s not the worst habit in the world…and it’s not like we actually do it that often….but it’s probably not the best habit, either. And the biggest problem with it? Salads are my go to. And there’s a SERIOUS shortage of delicious salad options out there.

- 1 (5 oz.) container BrightFarms Spring Mix
- 1 Simple Truth boneless, skinless chicken breast, marinated
- 1/2 c. fresh pineapple, chopped
- 1/2 c. red pepper, chopped
- 1/2 mango, chopped
- 1/2 avocado, chopped
- 2 Tbsp. shredded carrots
- 2 Tbsp. shredded purple cabbage
- 1 Tbsp. sliced almonds
- For marinade (optional):
- 2 Tbsp. orange juice
- 1 Tbsp. olive oil
- 1 tsp. lime juice
- 1 Tbsp. soy sauce
- 1 Tbsp. fresh cilantro, minced
- 1/2 Tbsp. honey
- 1 clove garlic, minced
- 1/4 tsp. ginger
- 1/4 tsp. allspice
- For the dressing:
- 1/4 c. olive oil
- 2 Tbsp. lime juice
- 1 Tbsp. honey
- 1 tsp. dijon mustard
- 1/4 tsp. ginger
- 1/4 tsp. garlic powder
- 1/8 tsp. pepper
- pinch of allspice
- (Optional) Combine ingredients for marinade; pour over chicken breast and marinate 1 hour or overnight.
- Grill chicken until no longer pink.
- Assemble salad by topping spring mix with pineapple, red pepper, mango, avocado, shredded carrots, purple cabbage, sliced almonds, and grilled chicken breast.
- Combine ingredients for dressing; shake well.
- Pour dressing over salad as desired.
