Nothing says comfort food like Beef Stroganoff…and this recipe is the BEST!
Made with sirloin steak, fresh mushrooms, green onions, and the most delicious stroganoff sauce, it’s a classic dinner recipe everyone loves. The perfect cold weather meal!
Best of all, it comes together in just 30 minutes, which makes it perfect for busy weeknights. There are plenty of beef stroganoff recipes out there, but you won’t find one as easy (or flavor-packed) as this!

As soon as cold weather comes around, I’m all about the comfort food. Give me soups and casseroles and anything warm. And definitely give me Beef Stroganoff. It’s one of those classic meals you come back to time and time again….and when you find a good one….there’s nothing better.
This recipe is our absolute favorite, and we always serve it with Reames Egg Noodles. Because they’re thick and hearty – unlike dry noodles – and they pair perfectly with stroganoff!

Truthfully? Beef Stroganoff is one of my family’s favorites on the Noodles and Company menu. But I’d SO much rather make it at home! And once you try this recipe, you’ll see why.
What is Beef Stroganoff?
A Russian dish made with sautéed pieces of beef served in a savory sauce. It is typically served over egg noodles, but can also be served over rice.
Ingredients
- 2 lbs. sirloin steak
- Salt & pepper to taste
- 1 c. flour
- 1/2 c. butter
- 80z. mushrooms
- 4 green onions
- 2 cloves minced garlic
- 1/2 tsp. lemon juice
- 1 c. beef broth
- 2 tsp. dijon mustard
- 1 tsp. dried tarragon
- 1/2 c. sour cream
- 1 package Reames Egg Noodles
Instructions
- Cut sirloin into small strips. Sprinkle with salt & pepper.
- Place flour in a large plastic bag; add meat and shake lightly to coat.
- In large skillet, melt 3 Tbsp. butter. Add the meat and brown on all sides. Remove from heat.
- Prepare stroganoff sauce.
- Stir browned sirloin into sauce and heat over low heat.
- Prepare noodles according to package instructions. Serve beef over cooked noodles.
Sauce recipe
- In a large skillet, melt 5 Tbsp. butter over medium heat.
- Add mushrooms, onions, garlic and lemon juice. Saute 3-5 minutes.
- Add 2 Tbsp. flour to skillet. Cook, stirring, for one minute.
- Add beef stock and bring mixture to a boil. Cook until thickened, 3-5 minutes.
- Stir in mustard, tarragon, and sour cream.
Without sour cream
You can substitute Greek yogurt for the sour cream or simply omit the sour cream from the recipe altogether.
With ground beef
Beef Stroganoff is sometimes made with ground beef as a quicker, less expensive alternative to sirloin. To make this recipe with ground beef, simply replace the sirloin with 2 lbs. ground beef and prepare according to instructions.

Reheating leftovers
Leftovers can easily be reheated on the stovetop or microwave. To reheat on the stovetop, simply place leftovers in a pan with some additional beef broth to prevent the meat from drying out. Heat over medium heat, stirring occasionally.

- Add remaining butter to skillet and melt over medium heat.

- Add 2 Tbsp. flour. Cook, stirring, for one minute.
- Add beef stock and bring mixture to a boil. Cook until thickened, 3-5 minutes.
- Stir in mustard, tarragon, and sour cream.
- Add browned sirloin to sauce and heat over low heat.
- Prepare noodles according to package instructions. Serve beef over cooked noodles.
