Growing up, I remember my dad talking a lot about attitude. The importance of it. The impact of it. The fact that “attitude is everything”. I’m pretty sure it was in the context of my bad attitude (haha) and I’m pretty sure I wanted nothing more than for him to STOP talking about it. But now that I’m an adult….well….I get it. Dad was right. Attitude really does make all the difference.
I notice it with my kids, in my conversations with friends, in my family, on Facebook, and…..in myself. So I’ve been trying, really trying, to keep a positive attitude. To look for the good in the situation. To appreciate the chaos, as difficult as that might be. The good news? My life seems to give me lots of opportunities for practice.
Case in point: our recent trip to Door County. When Jorden had the stomach flu the day before we left, it felt like a bit of a rocky start. And when Myla decided to scream through a good portion of our drive, and the other girls then felt the need to chime in with their own set of complaints, I think both Jorden and I wondered what we had gotten ourselves into. And then came the fish boil.
For those of you who have never been to a fish boil, it’s essentially an outdoor cooking event where everyone gathers around a large fire while the food is being cooked in it. It’s a Door County tradition, and something we knew we wanted the girls to experience. So we found a restaurant, ordered our drinks, and headed outside to the fire. And then…..it started raining. Just like that. And when I say raining, I mean down pouring. Which makes cooking over an outdoor fire a little bit tricky.
But. We made the most of it! And had an amazing time. We sat outside until the fish was ready, we sampled some Door County Cherry Riesling, and we ate every last morsel of food on our plates. And when it came time for dessert, we all happily chose the cherry pie over the vanilla ice cream. Because, as Jorden said, who wants vanilla when they can have cherry? Which got me thinking – the best option would actually be a combination of both cherry AND vanilla….because the real question is who wants to have to choose? This Cherry Vanilla Ice Cream is the best of both worlds, and best of all, it doesn’t require any special equipment. Just 4 ingredients and a loaf pan, and you’re on your way to the best Cherry Vanilla Ice Cream! (You can thank me later!)
No Churn Cherry Vanilla Ice Cream
- 3 1/2 c. frozen sweet cherries
- 2 c. cold whipping cream
- 1 can sweetened condensed milk
- 1 Tbsp. vanilla
Puree 3 c. frozen cherries in a blender; set aside.
In a large mixing bowl, combine sweetened condensed milk and vanilla.
In a separate [cold] mixing bowl, whip the cream until stiff peaks form.
Fold in sweetened condensed milk, then gently fold in pureed cherries.
Pour mixture into loaf pan; add remaining whole cherries.
Press wax paper against the surface of the ice cream; freeze until solid.
