I was talking to my friend Lisa the other day about Christmas, and the fact that it’s now less than two weeks away, and the fact that I’m just not feeling the Christmas spirit as much as usual. Her answer? “It’s the weather.” At first I laughed, thinking that was a pretty simplistic explanation of my lack of Christmas spirit. But the more I thought about it, the more I realized…. she was right!
How could I expect it to feel like Christmas when it doesn’t feel like Christmas? It’s not cold, there’s no snow, there are no fires in the fireplace or cups of hot chocolate or weekend mornings spent sledding and making snow angels. Really, if you think about it, it’s no wonder I’m not feeling the Christmas spirit!
But you know what? I still have 9 days left. And I intend to make the most of them! Starting with Christmas music, Christmas cookies, and hot chocolate. Honestly, there’s nothing that can get me ready for Christmas more quickly than a warm cup of hot chocolate and a big plate of cookies to decorate. I recently discovered International Delight Hot Chocolate, and let me just say it’s completely delicious. The perfect balance of creamy and sweet….and all you have to do is heat & serve!
So, in preparation for getting our Christmas spirit on, I decided to make a fun new kind of frosting for us to use on our cookies. HOT. CHOCOLATE. BUTTERCREAM. I used the International Delight Milk Hot Chocolate, but it also comes in Dark Hot Chocolate (and Original & Vanilla Nog). Let’s just say I’m feeling confident that we’ll have NO problem finding our Christmas spirit…..in between sips of hot chocolate and licks of hot chocolate buttercream…..I’m sure it’s in there somewhere!

- ⅓ c. salted butter
- ⅓ c. International Delight Milk Hot Chocolate
- 2 Tbsp. unsweetened cocoa powder
- 4 c. powdered sugar
- marshmallow bits
- Place butter in a large mixing bowl and beat until fluffy.
- Gradually add in 2 cups of powdered sugar, beating well.
- Slowly add in hot chocolate and cocoa powder.
- Add remaining 2 cups of powdered sugar, a little bit at a time, mixing thoroughly.
- *Optional: heat frosting slightly before using. Top with marshmallow bits.
