You guys – I had the coolest experience last night! I was invited to attend a live cooking demo with one of the winners of Hell’s Kitchen….so obviously I went….and it was so much fun! I took one of my friends with me, and we ate and drank and talked and laughed…and at the end of it, all I could think was, “I will NEVER make anything he made for us tonight.”
Don’t get me wrong….the food was absolutely delicious, and I enjoyed every bite of it….but Seafood Ceviche and Pan Seared Herb Basted New York Strip is just not the way I cook. Not at all. In fact, I would tend to say I’m on the exact opposite end of the spectrum. For me, the easier, the better!!!
I haven’t always been this way….at least I don’t think so. Somewhere deep inside of me is the person who has the time and energy to be putzy with food. But then along came 4 kids….and the rest is history. These days, the ONLY way we’re eating is if it’s quick and easy. And I’m guessing I’m in good company.
Which is exactly why I love shortcuts. Things that make quick & easy possible…without sacrificing flavor. I recently tried the new Hidden Valley® Cilantro Lime Ranch®, and let me tell you it is AWESOME! It’s fresh and tangy and perfect for adding great Southwest flavor to any recipe.
So naturally, I knew I needed to make an Easy Guacamole Dip with it…because Guacamole. And Ranch. And EASY! I was amazed by how much flavor the dressing added to the avocado, and honestly, it needed nothing more! That said, I decided to jazz mine up with some fresh cilantro, chopped red onion, and charred corn….which, for the record, took me all of 4 extra minutes.
So there you have it. Easy Guacamole Dip that tastes amazing and takes just 5 minutes from start to finish. We can save the fancy cooking for the winners of Hell’s Kitchen….or people with a lot of extra time on their hands (aka not me).
- 2 c. avocado, cubed (2 large or 3 medium avocados)
- ⅓ c. Hidden Valley® Cilantro Lime Ranch®
- Optional garnishes:
- 2 Tbsp. fresh cilantro
- 2 Tbsp. diced red onion
- 2 Tbsp. charred corn
- Mash avocado in a small mixing bowl. Stir in Hidden Valley® Cilantro Lime Ranch®.
- Enjoy as is or top with garnishes as desired.
- Serve with your favorite tortilla chips.
