Greek Bowls

All your favorite Greek flavors in a deliciously hearty bowl! These Greek Bowls are packed with cucumbers, tomatoes, kalamata olives, feta cheese, and seasoned ground beef... and a healthy dose of homemade tzatziki sauce takes them to the next level!

Ingredients

  • 1 pound lean ground beef
  • 1 Tablespoon olive oil
  • 4 cloves garlic minced
  • 1 Tablespoon Greek seasoning blend
  • 1 teaspoon kosher salt
  • 2 cups cucumber sliced/chopped
  • 2 cups tomato sliced/chopped
  • 1 cup kalamata olives sliced or whole
  • 1/2 cup red onion sliced
  • 8 ounces feta cheese cubed or crumbled
  • 1/2 cup tzatziki

Instructions

  • Chop the cucumbers, tomatoes, onion, and olives. Set aside.
  • In a large skillet, heat 1 Tablespoon olive oil. Add ground beef, minced garlic, Greek seasoning, and salt. Cook, crumbling with a spatula, until meat is no longer pink.
  • Assemble the bowls by dividing the meat and vegetables evenly among 4 bowls.
  • Top with tzatziki, fresh dill, and a squeeze of lemon juice.
  • Serve with pita bread.

Notes

Recipe Variations

  • Add a base of lettuce, rice, or orzo
  • Add green bell pepper or any of your favorite vegetables
  • Add sliced pepperoncinis for a spicy kick
  • Substitute chicken or gyro meat for the ground beef
  • Use crumbled feta instead of chunk feta
  • Substitute green or black olives, capers, or caperberries
  • Add chickpeas or lentils
  • Add additional fresh herbs, such as oregano, or fresh mint
  • Add Lemon Parmesan Roasted Potatoes
