California Roll Cucumber Salad

All the flavors of your favorite sushi roll in a delicious cucumber salad! This California Roll Cucumber Salad combines crunchy cucumbers with imitation crab, creamy avocado, edamame, and spicy mayo in an addictive salad you're going to LOVE!

Ingredients

  • 16 ounces mini cucumbers sliced
  • 8 ounces imitation crab shredded
  • 1 cup edamame shelled
  • 1 large avocado chopped
  • 2 green onions sliced
  • 1/2 cup spicy mayo
  • 1/2 teaspoon sesame seeds
  • 1/2 teaspoon black sesame seeds
  • = soy sauce to taste

Instructions

  • In a large bowl, combine sliced cucumbers, shredded crab, chopped avocado, sliced green onions, and edamame.
  • Add spicy mayo and stir until coated.
  • Garnish with sesame seeds, serve with soy sauce to taste.

Notes

Recipe Variations

  • Add shredded carrots or peppers
  • Use any type of cucumbers
  • Substitute shrimp OR real crab for the imitation crab
  • Substitute wasabi mayo for the spicy mayo (or use both!)
  • Keep it mayo-free by using soy sauce
  • Add pickled ginger or dried seaweed
  • Add cooked rice or crispy rice
  • Top with crispy wonton strips

 

Storage Tips

This salad can be stored in an airtight container in the refrigerator for up to 4 days, but will taste freshest and crispiest when eaten within 2 days.
