Blistered Tomato Bruschetta

Ingredients

  • 1 package crostini toasts about 30 crostini toasts OR homemade crostini

Garlic Herb Cream Cheese Spread

  • 4 ounces cream cheese softened
  • 1/2 cup sour cream
  • 1 clove garlic minced
  • 1 Tablespoon fresh basil minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Blistered Tomatoes

  • 2 Tablespoons olive oil
  • 2 cups cherry tomatoes OR grape tomatoes
  • 1 shallot thinly sliced
  • 3 cloves garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 Tablespoons basil thinly sliced

Instructions

  • Prepare the cream cheese spread by combining all ingredients in a small mixing bowl. Use a hand mixer to whip until smooth and creamy.
  • Prepare the tomatoes by heating 2 Tablespoons olive oil in a large skillet over medium-high heat.
  • Add the tomatoes and cook, undisturbed, for 2 minutes.
  • Add the sliced shallot, minced garlic, salt & pepper. Cook 2-3 minutes more, gently stirring 2-3 times.
  • Remove from heat; add fresh basil.
  • Assemble the bruschetta by adding a spoonful of cream cheese spread to each crostini toast. Top with blistered tomatoes.

Notes

Recipe Variations

  • Use toasted baguette slices in place of crostini toasts
  • Use regular or flavored cream cheese instead of garlic herb cream cheese spread
  • Substitute whipped feta or whipped ricotta
  • Add a spoonful of olive tapenade
  • Substitute onion for the shallot in the blistered tomatoes
  • Add cooked, crumbled bacon
  • Top with freshly grated parmesan cheese
  • Garnish with any of your favorite fresh herbs or seasonings
