Taco Salad

Taco Salad is one of our all time FAVORITE dinner recipes. It has all the flavors of tacos... in a light, fresh, delicious salad. It's easy to make, and so satisfying you won't even miss the shell. If you love tacos, this recipe is for you!

Ingredients

  • 8 ounces lettuce
  • 1 pound ground beef or ground turkey
  • Homemade Taco Seasoning OR 1 package taco seasoning
  • 3/4 cup chopped tomatoes
  • 3/4 cup shredded cheese
  • 1/2 cup black beans drained and rinsed
  • 1/2 cup corn
  • 1/2 avocado chopped
  • 1/2 jalapeño thinly sliced
  • 1/4 cup diced red onion
  • 1 Tablespoon minced cilantro
  • tortilla chips
  • sour cream
  • 1 lime

Instructions

  • Brown meat; add seasoning and water and prepare according to instructions.
  • Assemble salad ingredients in a large serving bowl.
  • Top with minced cilantro and sour cream.
  • Squeeze lime juice over the top of the salad.
  • Serve with additional sour cream or salad dressing of your choice.

Notes

  • Top with homemade Pico de Gallo or Guacamole
  • Add sliced black olives
  • Substitute pinto beans for black beans
  • Substitute or add queso fresco
  • Substitute shredded chicken for the ground turkey
