Zucchini Stir Fry

Stir fried zucchini and onions in a sweet and savory sauce, garnished with sesame seeds and crushed red pepper flakes. This dish is delicious over rice or all on its own!

Ingredients

  • 3 medium zucchini chopped
  • 1/2 yellow onion chopped
  • 1 Tablespoon sesame oil
  • 4 garlic cloves minced
  • 1 1/2 Tablespoons soy sauce
  • 1 1/2 Tablespoons teriyaki sauce
  • 1 1/2 Tablespoons hoisin sauce
  • 1/2 teaspoon sesame seeds
  • 1 teaspoon crushed red pepper flakes

Instructions

  • Chop the zucchini and onion into bite sized pieces as desired. Set aside.
  • Heat the oil over medium-low heat. Sauté the onion for 3-5 minutes, then add the minced garlic and sauté for 1 minute until fragrant.
  • Add the zucchini and sauces. Increase the heat to medium and sauté 5-8 minutes, until tender crisp.
  • Remove from heat, garnish with sesame seeds and red pepper flakes as desired. Serve over rice or enjoy as is.

Notes

Recipe Variations

  • Add additional vegetables like mushrooms, green peppers, or bok choy
  • Substitute vegetable or avocado oil for the sesame oil
  • Slice the zucchini into rings or half moons
  • Add ground turkey, ground beef, or chicken breast
  • Add 1/4 teaspoon Chinese 5 Spice
  • Use any combination of soy sauce, teriyaki sauce, and hoisin sauce
  • Add a squeeze of sriracha or chili garlic sauce for extra heat
  • Serve over cauliflower rice
