Zucchini Stir Fry
Stir fried zucchini and onions in a sweet and savory sauce, garnished with sesame seeds and crushed red pepper flakes. This dish is delicious over rice or all on its own!

Ingredients

medium zucchini
chopped
1/2
yellow onion
chopped
1
Tablespoon
sesame oil

garlic cloves
minced

Tablespoons
soy sauce
1 1/2
Tablespoons
teriyaki sauce
1 1/2
Tablespoons
hoisin sauce
1/2
teaspoon
sesame seeds
1
teaspoon
crushed red pepper flakes
Instructions
Chop the zucchini and onion into bite sized pieces as desired. Set aside.
Heat the oil over medium-low heat. Sauté the onion for 3-5 minutes, then add the minced garlic and sauté for 1 minute until fragrant.
Add the zucchini and sauces. Increase the heat to medium and sauté 5-8 minutes, until tender crisp.
Remove from heat, garnish with sesame seeds and red pepper flakes as desired. Serve over rice or enjoy as is.
Notes
Recipe Variations
Add additional vegetables like mushrooms, green peppers, or bok choy
Substitute vegetable or avocado oil for the sesame oil
Slice the zucchini into rings or half moons
Add ground turkey, ground beef, or chicken breast
Add 1/4 teaspoon Chinese 5 Spice
Use any combination of soy sauce, teriyaki sauce, and hoisin sauce
Add a squeeze of sriracha or chili garlic sauce for extra heat
Serve over cauliflower rice
