Vanilla Muffins

These muffins are moist, dense, and packed with the sweet flavor of vanilla. They make the perfect breakfast or snack and are delicious with strawberry jam, butter & honey, or all on their own!

Ingredients

  • 1 cup granulated sugar
  • 2 large eggs
  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1 cup milk
  • 1/4 cup vanilla Greek yogurt
  • 4 Tablespoons butter melted
  • 2 Tablespoons vanilla extract

Instructions

  • Preheat oven to 375° F.
  • In a large mixing bowl, combine eggs and sugar and beat until creamy.
  • Stir flour and baking powder together; add to sugar mixture alternately with milk.
  • Add Greek yogurt, melted butter, and vanilla extract and beat thoroughly.
  • Grease muffin tins; fill cups 3/4 full.
  • Bake at 375° 18-20 minutes.

Notes

Storing Muffins

Leftover muffins can be stored in a paper towel-lined airtight container at room temperature for up to 1 week. For longer storage, wrap muffins tightly in foil or plastic wrap and place in freezer bags. Freeze for up to 6 months, then defrost at room temperature before enjoying.
