Turkey Burgers

Ingredients

  • 1 pound ground turkey 10% - 15% fat
  • 1 Tablespoon mayonnaise
  • 1 Tablespoon dijon mustard
  • 1 teaspoon worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon pepper
  • 4 hamburger buns for serving
  • hamburger toppings as desired

Instructions

  • In a medium mixing bowl, combine the ground turkey, mayo, mustard, worcestershire, and spices. Use your hands to combine the ingredients just until mixed. Do not overwork the mixture, as it will lead to tougher patties.
  • Divide the mixture into fourths and make 4 large, round patties. Note: the mixture may be sticky, but don't worry. It will firm up in the pan.
  • Heat 2 Tablespoons olive oil in a large skillet over medium heat. Add the patties and pan fry 4-6 minutes on each side, turning once. Patties should be golden brown and internal temperature should reach 165°F.

tips & tricks

There are a few different things you can do if your meat mixture is either too soft or too crumbly. If it's too soft, mix in some panko crumbs to help the mixture hold its shape. You can also place the mixture in the freezer for up to 20 minutes before forming the patties to help it firm up. If it's too crumbly, add an egg for moisture and extra binding.

Recipe Variations

  • Substitute ground chicken for ground turkey
  • Add 2 Tablespoons panko bread crumbs for texture
  • Add additional seasonings, such as smoked paprika, cayenne pepper, dried oregano, or dried thyme
  • Add a few dashes of your favorite hot sauce
  • Add finely minced onions, mushrooms, or jalapeños
  • Add 1/4 - 1/2 cup shredded cheese to the ground turkey mixture
  • Serve them straight up (no bun) or in a lettuce wrap
  • Chop them up and make them into a burger bowl
