Teriyaki Shrimp Crostini

Ingredients

  • 24 jumbo raw shrimp peeled and veined
  • ½ cup Kikkoman® Teriyaki Marinade & Sauce
  • 1 French baguette
  • 2 cups shelled edamame
  • ½ cup lemon juice
  • cup tahini
  • 5 tablespoons olive oil
  • 3 cloves garlic
  • 2 tablespoons cilantro
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • 1 red chili pepper for garnish
  • cilantro leaves for garnish

Instructions

  • In a medium mixing bowl, combine raw shrimp and Kikkoman® Teriyaki Marinade & Sauce. Marinate for 30 minutes - 2 hours.
  • While the shrimp is marinating, slice the baguette into thin slices. Place slices on a baking sheet; bake at 350° for 6-8 minutes.
  • In a food processor or high-powered
    blender, combine shelled edamame, lemon juice, tahini, garlic, cilantro, salt,
    and pepper. Blend until smooth and creamy.
  • Grill the marinated shrimp for 2 minutes on each side or until completely cooked through.
  • Assemble the crostini by topping each toasted bread slice with 2
    tablespoons of hummus and 1 grilled shrimp. Garnish with chili peppers and
    cilantro leaves as desired.

Notes

For extra teriyaki flavor, brush grilled shrimp with additional sauce before assembling.
