Ingredients

  • 20 ounces refrigerated or frozen cheese tortellini
  • 6 cups fresh spinach
  • 14 ounce can artichoke hearts chopped

Sauce:

  • 4 Tablespoons salted butter
  • 1/4 cup flour
  • 1 teaspoon kosher salt
  • 1/4 teaspoon pepper
  • 4 cloves minced garlic
  • 4 cups milk
  • 1 cup shredded parmesan cheese
  • 1 cup shredded mozzarella cheese

Instructions

  1. Cook tortellini according to package instructions. Set aside.
  2. Prepare sauce by melting butter and minced garlic in a medium saucepan over medium-low heat.
  3. Stir in flour, salt, and pepper and cook, stirring, 3-5 minutes.
  4. Stir in milk; increase heat to medium and cook, stirring, until thickened and bubbly.
  5. Stir in cheeses.
  6. *If sauce is too thick, add more milk slowly until desired consistency is reached.
  7. Stir in cooked tortellini, fresh spinach, and chopped artichoke hearts.
  8. Season with salt and pepper as desired.
