Southwest Chicken Wonton Cups

Ingredients

  • 1 package 24 count wonton wrappers
  • 1 1/2 pounds cooked chicken diced
  • 1 cup sour cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 2 cups shredded Monterey Jack cheese
  • 2 Tablespoons Southwest Seasoning
  • 1/2 cup diced green pepper
  • 1/2 cup diced red pepper

Instructions

  • Preheat oven to 350°F.
  • Spray 2 muffin pans with cooking spray.
  • Place one wonton wrapper in each muffin cup; bake 8-10 minutes, until lightly brown. Remove from oven and cool.
  • In a medium-sized mixing bowl, combine chicken, sour cream, salt, pepper, and garlic powder.
  • In a separate small bowl, combine shredded cheese and southwest seasoning.
  • Spoon filling into each wonton cup, filling almost until full.
  • Sprinkle with cheese mixture and diced bell peppers. *Cups will be full.
  • Return to oven and bake for an additional 10 minutes, until wontons are golden brown and cheese is melted.
