Shaved Brussel Sprout Salad

The most delicious Shaved Brussel Sprout Salad - loaded with fresh parmesan, Marcona almonds, and a sweet balsamic drizzle. Enjoy it all on its own or with the addition of grilled chicken, salmon or shrimp!

Ingredients

  • 5 ounces mixed greens I used spinach + arugula
  • 1/2 pound shaved brussel sprouts
  • 1/2 cup shaved Parmesan cheese
  • 1/4 cup chopped basil
  • 1/4 cup Marcona almonds
  • Lemon Vinaigrette to taste
  • Balsamic Glaze to taste

Instructions

  1. Chop the mixed greens and basil and shave the brussel sprouts (see notes below.)
  2. Combine in a large bowl, drizzle with vinaigrette to taste, and toss to coat.
  3. Add the Parmesan, almonds, and balsamic glaze.
  4. Garnish with fresh cracked pepper as desired.

Notes

how to shave brussel sprouts

Knife: Remove any wilted outer leaves from the brussel sprouts. Working one at a time, hold the sprout at the base and slice cross-wise until you reach the stem.
Mandoline: Remove the any wilted outer leaves from the brussel sprouts. Use a fork to hold each sprout at the stem, then slide the sprout repeatedly down the mandoline to slice.
Food processor: Remove the stem and any wilted outer leaves from the brussel sprouts. Use the slicing attachment to shave larger amounts of sprouts.
