Ingredients

  • 1 1/2 lbs. mini potatoes
  • 3 Tbsp. olive oil
  • 1/2 tsp. kosher salt
  • 1/2 tsp. onion powder
  • 1/2 tsp. garlic powder
  • Fresh ground pepper to taste

Instructions

  • Preheat oven to 450°.
  • Rinse and dry potatoes, then cut them into quarters.
  • Place potatoes in a large bowl.
  • In a separate small bowl, combine olive oil and seasonings. Mix well.
  • Pour olive oil mixture over potatoes and toss to coat.
  • Spread on a rimmed baking sheet; bake at 450° for 25-30 minutes.
