Reuben Meatballs

Everyone loves a good Reuben, and these Reuben Meatballs are the ultimate fun twist! Loaded with creamy Swiss cheese, crisp sauerkraut, and tangy Thousand Island dressing... they're hot, cheesy, and SO delicious!

Ingredients

  • 1 package Farm Rich Homestyle Meatballs
  • 2 cups sauerkraut
  • 2 cups shredded Swiss cheese divided
  • 1 15 ounce can condensed cream of onion soup
  • 1 cup Thousand Island dressing
  • 1 tablespoon caraway seeds

Instructions

  • Preheat oven to 350° F.
  • In a large mixing bowl, combine frozen Farm Rich Homestyle Meatballs, sauerkraut, cream of onion soup, 1 cup Swiss cheese, Thousand Island dressing, and caraway seeds. Mix until combined.
  • Transfer the mixture to a 9x13 inch baking pan. Sprinkle with remaining Swiss cheese.
  • Bake at 350° for 30-35 minutes, until hot and bubbly.
  • Garnish with minced parsley and serve with rye bread or rye chips.

Notes

Recipe variations:
  • Add 1/2 cup sauteed onions
  • Add 1/4 cup pickle relish for extra tanginess
  • Substitute 8 ounces softened cream cheese for half of the Swiss cheese
  • Add 1/2 teaspoon cayenne pepper for a spicy kick
  • Substitute any flavor of condensed cream soup
  • Serve them in a bun for a Reuben Meatball Sub
