Mediterranean Tuna Salad

Mediterranean Tuna Salad combines albacore tuna, bell peppers, kalamata olives, sun dried tomatoes and feta cheese in a delicious tuna salad that's completely mayo-free!

Ingredients

  • 2 flour tortillas 8 inch, I used whole wheat
  • 2 cans albacore tuna 5 ounces each, drained
  • 2 Tablespoons olive oil
  • 2 Tablespoons red onion chopped
  • 2 Tablespoons green pepper chopped
  • 2 Tablespoons kalamata olives chopped
  • 2 Tablespoons sun dried tomatoes chopped
  • 2 Tablespoons feta cheese crumbled
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon pepper
  • 1/4 teaspoon salt or more, to taste

Instructions

  • In a small bowl, combine drained tuna, olive oil, red onion, green pepper, olives, sun dried tomatoes, feta cheese and seasonings. Stir to combine.
  • Serve on a sandwich, wrap, salad, or enjoy all on its own.

Notes

Recipe Variations

  • Use any variety of tuna OR substitute canned salmon or chicken
  • Add drained chickpeas or white beans
  • Add toasted pine nuts
  • Add extra vegetables, such as chopped cucumber, red pepper, or tomatoes
  • Substitute Greek Vinaigrette for the olive oil & seasonings
  • Add a squeeze of fresh lemon juice
  • Stir in a dollop of Tzatziki Sauce
  • Add fresh herbs, such as parsley, oregano, or dill
