Ingredients

  • 1 cup diced grape tomatoes
  • 1/2 cup diced cucumbers
  • 1/2 cup diced kalamata olives
  • 1/4 cup diced purple onion
  • 4 ounces crumbled feta cheese
  • 1 Tablespoon red wine vinegar
  • 1 Tablespoon fresh oregano finely minced (or 1 tsp. dried)
  • 1/8 teaspoon pepper
  • juice of 1 lemon

Instructions

  • Add all ingredients to a medium bowl and mix gently to combine.
