Ingredients

  • 12 ounce bag fresh cranberries
  • 1/2 cup pomegranate cranberry juice
  • 1/2 cup granulated sugar
  • 1/2 cup pomegranate seeds
  • 1 lime
  • 1/2 teaspoon ground ginger

Instructions

  • In a medium saucepan, combine pomegranate cranberry juice and sugar.
  • Cook over medium heat, stirring occasionally, until sugar dissolves. Bring mixture to a boil.
  • Add cranberries, pomegranate seeds, zest and juice of lime, and ginger; reduce heat to simmer and continue cooking 8 minutes or until cranberries burst.
  • Cool slightly; then chill, covered, in refrigerator.
  • *Can be made up to 2 days in advance.

Notes

Recipe Variations

  • Use any type of juice, such as apple, cranberry, or cranberry apple
  • Omit the pomegranate seeds
  • Use lemon instead of lime juice and zest
  • Substitute brown sugar for granulated sugar
  • Add cinnamon, nutmeg or allspice
  • Adjust the sugar amount according to taste
